Now the Christmas has started!!! Swedish recepies!!

And I would like to tell you something what it is to me and The Crazy Norwegian and how we do it!!
And I have decided to give you some of my own, secret and really good recepies for Christmas, the one I can not celebrate Christmas without!!
Of course our celebration start at the first Sunday in advent, we light the first candle and put stars in the windows and suddenly the dark feels easier to stand!
Than it is time to make the "Swedish Glögg" the most Christmas drink there is!! In England and the USA they have eggnog, we have Glögg! It have really old traditions and are a little like Glüwine, but have its own touch!
They say it started with the catholic munks wich who came to the dark and sinful north to make us god christians!! They where cold and they got sick in the dark and cold, but they brought there wine with them. The wine went a little bad and they spiced it up to make it moore tasteful, and called it medicin and drank it hot because they where freezing dead!! Well, some of them survived, we became god christians and I think they had a lot of fun drinking it!!!!
Here is mine personal reciep for "Swedish Christmas Glögg"
1st bottle of great red wine
1,5 dl brown suger (muscavado is the best)
1,5 dl water (Yes ordinary water)
1 piece of dried Gingerroot
2 pieces of cinnamon
some dried pomerans (bitter orange)
2 tablespoons with raisins
10 sweet almonds
10 cloves
1 teaspoon cardamon
2 pieces af star anis
1,5 dl good brandy
1,5 dl vodka
Boil the water, brown suger and spices and let it rest over night.
Take the spices away and mix the fluid with the wine.
And than add the licker!
You might need some moore suger, just try it out!
And than you serve it hot, with raisins and almonds in it! Ooooooooohhhhhhh it is so good!! And you feel so good! You do not freeze at all any moore!!
If you do not drink alcohol just replace the wine and licker with redberryjuice!!
Next must on my list is "Lussebullar"
Thats the ones you see on the picture! It is a christmasbread, sweet and with saffran also with old traditions. In the old times the made those yellow bread to scare the devil away on the dark time of the year! "Lusse" Stands for Lucifer, and Lucifer is the Devil you know. With the munks there came spices and the saffran with its yellow color was put in the bread to remind of the sun wich soon would came back and of its light wich they thougt could keep Lucifer away!They made them i different shapes wich was symbolic and we still do. I make those right before we celebrate St Lucia a saint from Sicilien who brought light, long story! We take that another time!
Swedish Lussebullar!!
1,5kg weatflour
5dl milk
2 dl suger
200gr butter
1gr saffran
1,5 teaspoon salt
1 bag of dry yeast ca 12 gr
1 pot of smoth cottage cheese ca 2dl
2dl raisins
Mix flour,suger,salt,dry yeast,raisins in a bowl
Melt the butter and put the milk,cottage cheese,saffran in to it. Heat it up to almost 50 degrees you shall feel the heat to your finger and be able to put it in the fluid.
And mix the fluid with the dry stuff and work it. Let it rest until it have dubled its size.
Make breads in all shapes you want to and let them rest again for about 40 minutes. you can fill them with suger and butter or marsipan, thats really tasty!!!! Yummy!!Cover them with wipped egg and put som suger on and put in the owen until they are light brown on the top ca 12 minutes!225 degrees!!

When I have done those to things we dtart our Christmas in our special mixed swedish/norwegien way with our traditional "Cristmas tree day" It started 20 yaers ago when the Crazy Norwegians father refused to buy the tree as long he had his own in his own wood!! Even if they where ugly as hell!!Our friend Arve´s daughter cried some of the Christmases because the tree was so ugly! And I believe that, I have seen pictures!!
During all this years friends and realtives has comed together to go out in our wood,light a bonfire eat and drink and got a tree. Nowadays, there are no trees we can use so the Crazy Norwegian just buy them from a farmer near by and put them out in our wood! When we have spended the whole day drinking Glögg, talking and laughing by the fire, we take our trees and walk home to our guesthouse and aeat Christmasporridge before everyone goes home, and than the Christmas have really started at Granlund!!

And now I will give you a real secret!My Swedish Christmas meatballs!!
1kg mix meatthe kind you use for meatloaf
1 egg
1dl cream
0,5dl breadcrums
1 big shredded onion
1 tablespoon of suger
1 teaspoon of salt
1/2 teaspoon of white pepper
1/2 teaspoon with spiced pepper
And some cinnamon if you like to get Christmas touch!
Mix egg, cream. breadcrums, sugerand spices and let it rest for half an hour. Fry the shredded onion and blend in. Blend all with the meat and let rest a little while again. Than make small meatballs ca2,5cm and fry them in butter until they are brown!! A real must for a swedish christmas table!!Enjoy!!
