Making Better Food Choices (or What foods provide the most healthful benefits)

My future step-son brought his girlfriend and one of his buddies over, and we grilled out. Steak, baked potatoes, and a salad. He did a good job on the grill. All in all, it was a great meal with one exception: too much fat. Which leads me to the reason behind this post. Regular readers know I'm into nutrition, and now that things are beginning to quiet down, I can get back into my studies. From a previous post, The Game of 20 Questions about Nutrition in which I posed several questions I had about nutrition for the start of my research, and since today's post has to do with health, let's start with the question from that post: What foods provide the most healthful benefits?

Medium-Rare, Please

Beef is high is cholesterol. (That gunky white stuff what clogs your blood veins.)
Trim off as much visible fat as possible before cooking.
Top Sirloin is rated B+ for nutrients.

Obviously, protein from the steak, carbohydrates from the baked potato, and vitamins & minerals from the salad I just polished off were essential to a healthy diet. I, however, cannot eat a dry baked potato, so I added a tablespoon each of butter and sour cream. I also added 2 tablespoons of Green Goddess Dressing to my salad. Delicious, yes; nutritious, no, and that is where the meal goes wrong. There's too much fat in my meal.

According to Calorie Count.About.com (2010), "Top Sirloin Beef has a grade of B+." Beef contains very little sodium and no sugar, along with the necessary nutrients: niacin, phosphorus, selenium, vitamin B6, vitamin B12, and zinc. This steak has several good points. The only bad thing is that beef is "high in cholesterol." (Calorie Count.About.com, 2010). The steak was 6 oz., when I only needed 3. Now, you may be thinking, "But it's only 3 extra ounces, and where's the harm in that?" Well, folks, to paraphrase a cliche, too much of a good thing, when you break it down, can indeed be bad!

Calorie Count.About.com (2010) provided the nutrition facts for a 3 oz. serving of Top Sirloin Beef. (Remember, I ate 6 oz., and not the 3 oz. serving, so I just doubled everything.) Here's the Original Nutritional Calorie chart. I'll leave it to you to do the math.

The potato was medium - and a good choice for carbs to provide energy. However, I added butter and sour cream - both high in fat - which leads to fat in the bloodstream, and on the body. No doubt I just ate more fat than what the nutritional guidelines say we are supposed to eat. For me, it's 19g of fat (polyunsaturated and monounsaturated) per meal, or no more than 30% for the day. (The steak I ate provided for 20% of my total fat allowance for the day.) Even the salad was good. Had I just added pepper and lemon juice instead of a fat-filled dressing, it would have been even better as far as making a healthy choice.

We hear so many times that it isn't what we eat that makes us fat, but how much. I believe that thinking is just so incredibly wrong, and here's why: If there is fat in everything that a person eats, it leads to high cholesterol, which leads to high blood pressure, and eventually heart failure. So, with some additional - and preplanned thought - the meal I just finished could have been much healthier if I had stopped to think about my health. I was hungry because breakfast was at 8:00 this morning, and it's now almost 4:00p.m. Hunger and overeating is often the culprit behind poor food choices, but that should not be the reason a person uses to eat whatever he or she wants - yours truly included! Breaking things down like this helps me better understand the benefits of making wiser food choices. Now, I'm not going to get into telling you what you should and should not eat here. I'm just pointing out some facts. wink

So, what foods provide the most healthful benefits from the meal I ate? With the exception of the butter, sour cream, and high-fat salad dressing, everything else was a good choice. I could have filled up on the salad instead of having an extra helping of the steak and cut the fat content. I will have to begin measuring sour cream and butter if I want to use them on my baked potatoes, or find a different (i.e.: healthier) substitute, such as Butter Buds and plain yogurt mixed with fresh dill and chives. As for the salad dressing, I'll just have to pick up a bottle of lemon juice the next time I'm at the grocery store. smile

Prepare for a shock, I eat horse steak, no cholesterol whatsoever yes
As for reducing fats in your diet, you could also use cream based on soya or coconut cream instead of high fat dairy cream.
Although I am not fat myself, I do have to watch my cholesterol intake.
When younger I associated high cholesterol with fat people, a fable so I learned later.

I know other countries eat horse meat, but the U.S. government wants to ban it worldwide. Check this out: http://www.chow.com/stories/10298. When my dad was in the military, ostrich eggs and camel steak for breakfast was what he ate when he went abroad. He told me it was better than beef. bigsmile

Had to go do a search for it. Does Opera 10.10 have a bug with links? Anyhow, it was published in 2006, under Bush's administration. I'd like to know which Senator proposed it.

As for the U.S. government and world rule -- yes, our government is too bloated with a bunch of greedy pigs who would rather run things into the ground and take what they can get instead of doing an honest job and minding their own business.

No, I couldn't read it, it says file removed.

I worry about food becoming an industry, and in a later stage, a monopoly.
How poor would that be? And how miserable our lives will be then!
No worries for now though, plenty of horse steak still around.
Why anyone would want us to eat high cholesterol meat is beyond my comprehension.
I do know that the US is trying to get their chickens, and now maybe their beef, on our markets.
Fat chance.
They'd better lower the prices for local markets.

Food is an industry, and has been for a long time! Feedlots for cows, hog farms, chicken houses, turkey ranches, goat farms, sheep ranches - mass produced and full of antibiotics and growth hormones. Monsanto has a monopoly over genetically modified food crops, and has had for years. They've forced most of the small time farmers in this country out of business because they sue any farmer who doesn't rebuy their seeds. Farmers have to sign a contract when they purchase Monsanto seeds saying they won't save seeds for the next year's crop. They've been known to send private investigators out to ensure it doesn't happen. Only problem is, their seed modification makes the plants come up the following year in the wild, so if a farmer didn't buy their seeds, but Monsanto's hybridized plants are found, Monsanto takes the farmer to court, and Monsanto wins because of the contract. I've read about the Monsanto crops and sues around here.
It's too ridiculous and ludicrous for words, suing farmers because some seeds have landed upon their land.
What is more worrying is the massive use of Roundup.

I'm not sure about the horse meat here, so I'll check with my butcher next time. I don't want to end up pumped with medicine that are intended for pets.

It's no worse than what's put into the beef. The FDA passed a law allowing the antibiotics the feedlots use on the cattle, when they knew it caused brain tumors in people!

Processed foods, adding white sugar, additives in our foods, white rice is bad for us. It's hard to get good food that doesn't cost a fortune. No wonder people are getting sick from eating. I like watching You are what you eat .

I had to do research on nutrition for one of my essays in college last year. It does not surprise me that obesity is on the rise. With over-processed food, too much fat and suger in our diets, and a nutritional institute that is mysteriously silent about watching what you eat except for every 5 years when the pyramid diet is rewritten, people are left to their own devices. Not caring about one's health is the main thing. Just because it tastes good does not mean it is good for you! I like all that good tasting stuff too, but the thing is, you can make your diet healthy without losing flavor. It just infuriates me that our health is put at risk because of the all mighty dollar.

I have found, since a few years, that taste changes and evolves as well.
I'm not implying I can taste meds in meat or such, but too sweet or fat is no longer tasting good.
With that in mind, I won't let a sauce béarnaise pass by, every now and then.

I was talking with an older lady one day, she made a remark that made me think. She said chicken doesn't taste like chicken anymore. A few older ladies agreed with her. She said there has been to much added to it. Growth hormones and such.
Makes a person scared to even want to eat anymore. So confusing.

When my kids were small, the only reason they wanted to go to McD's was to play on the playground. The only time they got any food from there was if we were traveling out of state. Neither one of them can handle greasy food without getting upset stomachs.

this is very instructive/helpful.
since i like to cook, because i like to eat, i have been studying this also.
today, i am making gyoza which i am going to steam instead of fry. i cooked most of the fat out of some ground pork and made a spicy mix. if i serve dinner tonight with steamed spinach, bok choy,garlic, mushrooms and shallots and season it with crushed sesame/sea salt and a dash of tamari sauce, i can have a piece of homemade wheat bread with a smear of butter. but only if i eat only three gyoza.

i really don't like to get too obsessed with counting, but gradually, i am eating better and better and feeling better and better. the juicer helps. cool
