death, Haiti, Disaster, Haiti's Disaster
I'm positive I won't make any friends with this position I have on this topic, and I might even lose a few, but I never stray very far from my own beliefs. I can assume I will cross some fine line in the sands of many people's own opinions on the topic, but still I will cross those sand lines, and I will not tip toe!
Why are we America, always the one to bail out all other countries? Are we so fortunate at this moment, that we can afford another unpaid bill?
The disaster is horrible. It's saddening and sickening to see these people suffer. I even wish I could afford to send $10 their way to support the efforts of saving lives. I've seen the suffering children, and as a parent it hurts to look at these little fragile bodies and pay television screen witness to any child suffering. I wish to see this disaster find closure and for the people there to find relief. As one human to another is a disaster, I wish them nothing but relief!!!
Knowing Obama just promised 100 Million dollars to aid their relief must send some hope to their country I'm sure, or at the least I would think it does. Knowing we are sending in the military to help ease uprisings and civil unrest, is a relief to some extent, it is going to be helpful, right? I'm sure our people will be there for a long time to come, and there will be much suffering to come and more lives lost before Haiti sees any light at the end of this disaster.
How far are we going to go though?
How deeply rooted are we going to pledge our country and the funding to aiding the relief of this island of disaster?
Are we not right now, in our own country, dealing with our own disaster of economic structure and huge unemployment proportions?
Why is our country going to step up further funding then what we are capable of, while there are another dozen countries capable of doing the same? When a country in this world finds itself in a disaster, America always steps up, and they always look to us for help. It is part of our past history as a nation to stand up for the weak and the helpless. And not only do we bail out corporations within our own borders, but we always bail out 3rd world lands that suffer all the time. Aids in Africa, Tsunamis and Earth Quakes, we are the world's biggest charity organization, basically, and in many ways it's good, but here right now, I need to question the resolve of our commitment.
I think what we have done is enough. We have troops there, as well as what they have of their own. The UN is there and UN troops, and more countries pour in daily to help. Can we not, right now stand back and say, we are here, we are helping, now lets hope for the best? I don't see what else we need to do. I don't think we could or even should become any further obligated than we are at this time.
I'm not someone to turn a blind eye to suffering, but I think we have committed enough resources and energy as it is, maybe enough is enough? Do we not have a war we are dealing with too? Do we not have a economic crisis on our own hands at the moment?
Times are tough right now for most of us here in America, and I fear we will over step our abilities and further weaken our basic foundation of small, yet much needed stability! I don't think now is the time for America to extend ourselves beyond our means. We are there, we are supportive and willing, how much more is needed. Are there not other countries available to do our "job" for once?
Hearing today that Obama just called in Bill Clinton and George Bush to seek further ideas from them as to how to help Haiti further makes me question our real need to be there. I know for a long time Haiti has been a land of very cheap labor for Nike and other textile companies of America, believe it or not your socks on your feet were most likely made there, up until now. Are we there to rescue the people or the labor costs of some of our larger textile manufacturers? Are we there to secure Haiti for it's own betterment, or for our own?
We have to question our real obligations to Haiti. Is it Humanitarian relief or just for securing our corporate conglomerates source of cheap labor, where minimal wage is just under 1$ a day for more than 90% of the country? Where a major portion of t-shirts, shoes and clothing is made or embroidered though cheap labor, which now is in a disaster state, are we there for Haiti's people, or for corporate obligations. what is our real commitment?
Right now our country needs the work, and it would be a shame to know that all of this is in the effort to get this island of cheap labor, that has been back stabbing our work force for many years, back on it's feet as quickly as possible, before Americans might be "forced" to work for these companies again?
When Katrina hit the coast line of Southern Louisiana, there wasn't much help pouring in from outside of America, but now I see a small Island being dived into like as if there is something greater at stake then Humanitarian aid.
At a time in America where we are ourselves fighting day to day, do we have the ability to extend out our hands while we are running on fumes? I'm sorry to speak up, but I question our interests. I question our true reasoning to be so eager to launch a all out endeavor without taking the time to secure our own situation. America the great is now running a close 2nd to 3rd place in the dollar exchange, with China's Yen and the British Euro pushing us back. Are we really this strong? Are we really this able, or are we sorting the problem out to keep corporations from having to resort to our labor?
God help those who are there, god save the children and the weak. God, help America as well.....help us gain the strength to be the savor, if that is what we are, god help us if we are there because we have ulterior motives!

Single Fathers Advice: The At Home Dinner Date

Eventually that time will come when one of us single dads meets a certain woman, and has one of those dates where we make the offer to cook dinner. Now of course we are not all chefs in the kitchen, but how hard can it be to make a great meal for that special someone? Making it memorable is not hard at all if you make a plan for the evening to come. Now you could do something astonishing, creative, and crazy to impress her, right? Which can be done with some good planning, and a little help from this Author, who is after all a single father and a chef. We can at least help you produce a meal for two that no expensive restaurant can duplicate. At least of course in her eyes. Just remember, it's not just about the food, it's about building memories, and enjoying your time together.
Let's talk about the setting. No matter your circumstance, or kitchen and dinning area space. The idea is to promote a little romance and make the night a night of memory. Music and candle light my friends, it's just that simple. Burn a CD, or pick a radio station that will play the music you want to make the mood. There is always Pandora.com and other on line radio resources, where you can create a station to play the music you want to play during the experience.
Now were not all the same age, so music preferences will vary, but play what you think will set the mood for your age, her age, and the night in question. The best choice no matter what is to keep the volume low. You want her to hear you, and you want to be able to hear her, so the conversation isn't hindered by Frank Sinatra singing.."When the moon hits your eye, it'sa bigida pizza pie." Think mood gentlemen, think mood!
Candles make the mood just like music, just make sure you use enough to cover the whole house. From the dinning room, to the hallway, even in the bathroom, keep the lights of romance glowing everywhere she might go, and use unscented candles to allow your food to drench the air. You don't want to over do it, so keep some lights on, just let her see the effort that you have made.
Let's talk Menu. You can make a menu for her to read, writing out the choices she can have, and email it to her, or hand deliver it yourself. Allow her to make the choices, this lets you have a plan of attack, and when you write the menu based on what your comfortable cooking, she will appreciate your offer even more.
What if she tells you there is something she wants, but you have no clue or idea how to prepare it? Simple, take some time and learn the dish. Don't feel overwhelmed, look up the requested item on line. Take a recipe and follow it the best that you can. You might surprise yourself with your abilities and astonish her too.
Now don't be shy, if you make a mean grilled cheese sandwich, and French fries, toss that in. If your into cooking more difficult items, do it. It isn't about what you cook as much as the fact your cooking it. No matter what, make sure you do the cooking in front of her, don't just have it waiting for her when she gets there, doing this gives you both time to talk, and maybe she might even offer to help, and accept the offer, a little kitchen bonding is awesome. Keep it simple, do what your comfortable with, offer dessert if you want, offer sides, just do what you know best, and keep it real.
Give yourself enough time to get everything done, and invest in a egg timer. When your knee deep in conversation, the last thing you need to do is lose track of time and burn your baked asparagus.
Beverages. Again let her decide what your serving. Wine, beer, soda, whatever she wants, and if she offers to bring her own, so be it. Keep it pressure free, and allow her to make the choices that she wishes to make for the evening. The point is, your doing the cooking, and to a woman, at least the one this author has encountered, a man in the kitchen is an awesome thing!
After the meal is over, do the dishes, and make it clear you don't want her help, but then again, if she offers, don't say no. The closer she is the better, and what you do from here is up to the two of you. I just hope you take your time, and enjoy the experience. Oh and don't forget the baby sitter, and if not, then juggle a little. Show off your cooking skills and your parenting skills as well.

I opened the door to love recently, allowed the winds to change, and the earth to stop spinning for a little over a month. Until fate wisked her away, but before that I was blind and sleeping. I never knew what love could be until I opened that door, until I allowed chance a chance. I fell like her wall around her heart. What I realised is before her, I was blind folded as to what real love is....the temptation, the lust, the love....affection...simple touches....I was always the one who was affectionate, sensual, and lustful...I met my match, a perfect mirror of who I am....full of passion and a heart like no other...the way it ended, the way it started....all my love is torn, but I am so lucky...I will never be alone....for behind my eyes we still live....my memories live...and we still dance to no music, westill kiss like the wind, love like the warm air of summer....kissing you like the sun....
I lost her due to circumstances beyond our control, but happily...I'm glad I had the opportunity, and was allowed to see and breath love...I was treated like I treat...I was loved like I love....my heart melted, and my soul raptured....I miss her...I miss the love...but I am stronger now knowing her...I am more of a person having had her love....Connie Buske....You are missed, and not forgotten....live strong my dear, be strong....be you, above all else!

Mercury Contaminated Tuna
Most larger, longer living, cultivated fish are contaminated, not tainted. While Yellow fin, and dolphin are highly guarded as a delicacy, they are high in Mercury deposits. Due to their growth time, and harvested weights.
Pacific Salmon, wild caught, and farm raised are used quite a bit in Sushi, along with eel, and tuna. The older the fish, the higher the content.
There are many factors in the farm raising, and cultivation of Salmon that can introduce these fish to Mercury. The feeding, and area in which they are being raised can lead to Mercury contamination, and along with the processing plant, can also introduce these fish to being tainted.
The overall best practice is to use younger harvested fish, and not wild caught. Being a chef for over 20 years, I have purchased accidentally, higher mercury contaminated tuna. Albacore is considered the best, and most expensive, but after some research I discovered White Albacore to be the highest in Mercury content, and stopped buying it.
While in Sushi production, I switched to a salt water eel variety, rather than a fresh water species. I also started using processed seaweed, rather than the fresh, again to lower toxins in my productions.
I'd rather know I'm serving higher quality, with a lower quality fish, than serve a considered high quality fish, with a toxin contamination. Being practical is beneficial.

What Restaurant Owners Should Know
The one thing that can slip in and destroy your image, and customer base is a food born illness. With the constant rise of seafood products being placed on new menu's everywhere in America, and from different food sources imported from regions across the globe. Safe food handling, and sanitation guide lines from health departments around America have stepped up to help reduce the chances of illness, and food poisonings. The need to train people more effectively in safe food handling practices has been proved to be needed, and updated to a more stronger educational study program in the last couple of years.
With more reasons than the obvious, after September 11th, the Homeland Security Council pushed for more prevalent ethics to be introduced to the public, and private companies in America. The efforts have paid off, and many states have adopted better training guidelines for their departmental staff dealing with food handling, production inspections, and agriculture.
One major concern is Seafood. Commercially supplied shellfish from over seas, and both fresh and salt water species of fish are being more carefully monitored. Just recently Asia came under fire for the heavily contaminated quality of some species of fish. A once plentifully supply, and assortment of was thought good quality bassa (Vietnamese Species of Catfish), has come to now a somewhat fainter trickle. Still available in America, it has become a target of high inspection, and suspicion as far as quality is concerned, which has slowed the rate of importation, and dispersal.
The major problem with any seafood is in what happens once it reaches restaurants, and food outlets. Some bacteria although allowed to a small minuet percentage, can grow rapidly if not handled correctly by under trained employee's of any established outlet.
With the death rate in America of food poisoning being somewhat incalculable, a known large percentage comes from seafood, and other high protein products. Studies show that the eating of improperly cooked, or handled seafood might be the highest leading death rate of any food product in the country. Raw, or under cooked seafood has to be inspected closely by consumers.
Owners, take some precautions.
1. Have your staff trained completely by your local health department, making it prerequisite that a newly hired employee get his/her sanitation and food handling certificate before being hired, or receives training while working until a passing grade is established.
2. Keep good records of precautions used in food storage temperatures of your products both while in production, and while in storage.
3. Safe guard your food storage units from shut down. Hire an alarm company to monitor freezer, and cooler temperatures. After hours this comes in handy, and if the temperature should rise to a inappropriate level, most security companies will call the general manager at home to advise him/her of the situation.
4. Practice good sanitation guidelines, and if needed, find better suppliers if you suspect low quality products. Check for freezer burn, and discoloration upon delivery.
5. Have your cooks prepare, and inspect products before opening hours. Smelling the products before use could mean everything, but sometimes smelling raw products is not enough. A cooked small sample of the items before opening can more quickly alert them to bad products by the smell produced when cooking.
The most important thing to remember is it's better to take a questionable item off the menu for a night, than to make the wrong choice and serve it.
What Consumers Should Know.
Hepatitis A, Norwalk, and Rotavirus are three examples of viruses that can be found in raw shellfish, and raw seafood. A common virus that can be encountered in Oysters is the Norwalk. Which can cause symptoms in 24-48 hours. Symptoms that are nausea, projectile vomiting, diarrhea, fever, and possible head aches.
The most common illnesses coming from bacteria, and in which large doses can be fatal if ingested. A Bacterial infection from Shigella is a horrible ordeal to go through, but not the most common of bacteria infection, with Vibrio being slightly more common. Both come from poor handling procedures, and improper cooking techniques.
Toxins on the other hand, like Ciguatoxin, DSP and PSP react quickly on the consumer. Ciguatoxin comes from warm water species of fish, and cause dizziness, changes in core body temperature, diarrhea, and vomiting. Usually coming on in 30 minuets, to 36 hours of time. DSP and PSP are normally found in species of shellfish, and cause numbness, and uncoordination, which effects the nervous system of the consumer in 10-60 minuets.
There is also a Parasite found in raw, or under cooked seafood, that makes one reconsider eating sushi presentations. Anisakis, a horrible parasite, one which causes nausea, vomiting, coughing, bloody stools, and fever. Thats not all, if left untreated, this parasite tries to find the softest, thinest skin to eat their way through. This on the human body is found around the eyes.
The main thing to remember is that you eat at your own risks. If you enjoy raw Oysters, and raw preparations of shellfish, or seafood, you do this at your own risk, but if you do get ill, seek a emergency room. Emergency rooms are better equipped to deal with food poisonings, especially seafood.
Report any instance of illness to your local health department immediately. It might seem like you receive a gauntlet of questioning when you do, but in the long run your helping your fellow consumers.
What might have not killed you, might the next person. Health departments investigate depending on their way of accepting reports. Most will only investigate after 2-3 people complain about the same place. In order to deal with false epidemics, and false reporting. In the long run, it is important that you do report your illness, and do it properly. Keep the date of your visit in memory, and what you ate.
The best practice is to enjoy your seafood in smaller quantities, and once you find a good establishment, stick with it. If you are unaware of it's sanitation grade, ask to see it. The numbers speak for themselves, and the certificate should be posted in a area accessible to customers for viewing. Scoring is based on many factors, but food safety is the most important, so ask the manager questions, and don't be afraid to ask questions.
Ask about the quality, ask how the food is prepared, and even ask how its stored. Make friends, so to speak with the manager, or owners. The better they know you, the better they will understand your needs, and even the slightest most questionable food items will be kept from reaching you. More than likely you will receive the freshest of the fresh, if they know you better than Joe blow who just walked in the door.

Over the last 15 years, I have been working in the food, beverage, and hospitality industry as a working Kitchen Manager, Head Chef, Executive Chef, and Sous Chef. With over a total of over 20 years in the field, starting as a dishwasher at the local Italian American club, in Punta Gorda, Fla, I have come a long way to where I am now.
Cooking for people from both ex-GA Governor Zell Miller, recent GA Governor Sonny Perdue, Senator John Snow, and Senator Tucker. My food has graced the lips of Dolly Parton, Reba Macintyre, and Waylon Jennings. I even have a plate signed by Travis Tritt. I've earned a 4 1/2 star review from Food Beverage and Hospitality Magazine, while at the WaterCrest at the Fieldstone Resort under Chef Daniel F. Baker.
Using an hands on approach with all aspects of food production, training, and running a large or small kitchen with different department staff, and even culinary students, has come to me naturally. I have been in the management field as well, starting in my teens with the Texaco Corporation, opening the first co-op Diary Queen Texaco in the United States, and becoming Assistant Head Manager at 17.
Being totally unaccredited and self taught, has allowed me to apply my own skills in American Italian, American, American S.W., Scottish, Irish, Southern American, and dabbling in other areas as well, without being strapped down to a set learned style. Having not been formally trained has allowed me to become a great chef, using skills compiled, and honed from many years of training, and experimentation. I'm an artist, and totally original.

I never believed in the "make money from home" market. Maybe because I never had any luck with it!

Wow! I actually have a handle on being a single Dad! It is awesome, but sometimes....WOW!! I've done it all, you name it! Construction, Food Service, Executive Chef, Consultant, Manager, Trainer, Teacher...yadda yadda yadda!! But, but, being a single father of 3 little kids is a whole other world! Forget the back aches! Forget the stress of Executive work, forget consulting, managing, forget it all! Being a single dad blows them all away!
Whew!! Forget sleep too! What is that anyways? Sleep? Where, when, how??
Oh yeah, and forget women!! No, not all together! But, forget the dating scene! Date? Are you nutz? How? When? Where? Then what? I mean if I was to start a relationship, then what? What then? "Hi, nice to meet you, I'll see in a few weeks when I can get another baby sitter!"
Life! Well, I will never complain about my kids! Make all the messes you can kiddies! It's all good under Dad's hood! Pull out all the toys, please! Toss your lunch on the floor and smile at me! Great! No problems! I'll do the dishes, wash the cloths, make dinner...lol...change diapers! What else am a guy to do on a Saturday night!
Being a single father does have some perks! Women tend to check you out more at the grocery store! People hold doors open for ya, yeah it's true, doors are held open for men with kids!! People brag about meeting you, you know..."That guy is awesome, taking care of three kids, I'm so happy I met him!" lol! J/K- But, it is nice when people ask you how your kids are doing!

As the average American web surfer, in contrast to the world beyond our world, we use percentage wise, Microsoft's Internet Explorer, Fire Fox, Opera, Avant, and a few others. But majority wise IE8 and Mozilla's Fire Fox rage supreme between users in the US. The impact the new Opera browser has had is starting to take it's toll on this line up of browsers and it's easy to see why.
Opera already has started to gain favor in America, and in most cases take the place on private pc's as the default browser. Why?
America desires speed, and reliability. Opera offers that, and a considerable amount of freedom too! America needs an easy to use browser, and a functionality beyond just hitting the surf. With Opera downloading is simplistic and fast, and uploading is feverishly quick. The Opera browser enables users to personalize, and stipulate safety when concerned, easily. The astonishing speed, and variance of usage is very appealing, and enchanting for users familiar with IE8 and Mozilla.
As we watch America become "Operized" it is great to know that soon Opera's capability will be on everyone's desk top and lap top. It is only a matter of time before America finds the Opera better than the Fox.

America's Army game made it's debut a few years ago, and after several patches and fixes it is now currently at 2.8.5 in version from it's original. The US government seeing success from this release, went onward to create AA3, or America's Army Game 3. A new release based on the Unreal Engine Graphics.
AA3 did not receive a very thankful audience, it was very buggy, lagged, and in someways unplayable. Most complaints were on the game play, menu, and behavior of the game on line. Developers dodged hateful players questions on their forums, and then along came huge patches, in the attempt to solve the problems, which if you are familiar with AA2, you'll remember all the bugs it had at the start.
The question is, why? Is this game just a great recruiter, or does it go deeper?
Talking with some men and women from the Army itself, I asked some questions about the game. A military woman, recently home from Iraq, and honorably discharged, took her first look at AA2+AA3 at my home here in N.C.
She felt the graphics were great in both versions, and enjoyed the game play in both. She then answered a few questions I had. My belief is that these games are more than a recruitment tool, but maybe possibly a trainer as well to some extent.
What I believe is the United States Government is never going to spend the millions it spent, on something to just help get in new recruits. Although I believe it helps, I also believe that the actions shown in game, and the visuals are also intended to help familiarize "civilians" with weapon loading, and usage. In the small recesses of imagination, would it be possible to consider the game a tool, to insure men, in game play ages from 60-16 know how to load and operate a weapon, that if dropped in some kind of home front war zone by a fallen soldier, the new owner a "civilian" will be able to identify the weapon, and use it properly.
This lady of honor said this when I asked her about how she felt about my assumption.
"Sure, with the US weapons, and others, the movements and actual loading are almost exact." "I do believe that after a few hundred rounds, you would be familiar enough to demonstrate the ability to use the weapon correctly, especially with the 3.0 game, which is much more realistic!"
So am I just playing a game here?
America's government invented a FPS (First Person Shooter) and funded the creation of the AA series on the premise, and shroud of recruitment, and maybe skillfully teaching "civilians" on the side? America's Army game is a great online gamers delight, and has a strong following. The older version seems to capture older players, with it's gentlemen like quality of game play. The adult language, and humor is present on most servers, the weapons are fun, but take skill to shoot.

Dear Players of AA,
As of July 13th, 2009 I will no longer be a founder of the clan MTR. I have made the choice to start my own clan, again, and try something new. [MxH] will be compiled of the most elite of the elite players of the AA community. To do this, the idea of recruiting new members seems lame. The best idea is to get the foundation in place first for this clan before bringing on new members. Website, Servers, and even a commerce store will be available for members, and fans inside and out of the AA community.
The basic Idea is to build a player base, but to also build an awareness of the clan in the community. Also to bridge the gap between playing and merchandising to the public, the clan will be trade marked.
In transition to an open clan for public use like MTR and other clans, the Most Hated will by invite only, and less than 80 members at a time can adorn the tags at the beginning of their name. The expectation is to draw the attention away from the clan, and to the players. Highlighting new members, old, and retired. [MH] Will be a corner stone in the AA community, providing a new source for the AA community to share, connect, and play. Not just a clan site, but a community site as well.
