presenting.... marinara sauce

one of my favorite young friends, halldor dropped by last sunday. i had promised him a dinner of potstickers and mussels marinara. we talked a lot and listened to all kinds of music. finally, got down to making the 'potstickers' and re-doing my latest discovery for a salad.... romaine lettuce with avocado, mango and nectarines (all the usual suspects also... scallions, capers, radishes and a dressing i immitated from the sushi house} someday i will divulge the secret of that dressing, if i can remember what i did.)

anyway, we finally ate around midnight lol and we were really hungry by that time.

we never got to the mussels. the next day i experimented with the marinara sauce which i recommend everyone try. it's really easy and fast.

what started my obsession with marinara is the plethora of tomatoes i have grown in my little back yard. and peppers. i made gazpacho twice.

i also learned from remembering that someone said the easy way to skin a tomato is to freeze them. i did. and it worked.


when the tomatoes thaw out, just squeeze them and the skin comes off.

so here is the show and tell for mussels marinara. chef

wash and then steam the mussels



too many tomatoes



this is adjustible, just put what you have. for instance if you don't have scallions, use shallots. mushrooms would be cool too. marinara is supposed to be a little hot. i mean peppery hot. and served piping hot with buttered artisan bread. yes



add the capers after an hour of simmering.



the full dinner should really include the avocado, mango salad. and the artisan bread for sopping up the juices.


salad: with the magic dressing. i finally figured out how to make. but now i forgot what i did. i know it has mashed apple with no skin and rice vinegar, a dash of tamari sauce and fresh ginger juice. it is so delicious it makes you eat every bit of your 'rabbit food'. greens i mean.

also, another way to skin tomatoes if you dont have time to freeze and thaw, drop them in boiling water for one minute and then move them to cool water for another minute, makes the skins slide right off.

I must remember these methods for de-skinning tomatoes. I usually just use a knife to peel them. I do not like the skin on my sliced tomatoes.

that's the hard way all right. i don't mind the skins normally but not for marinara or spaghetti sauce. it's good 'roughage' you know. sherlock

Animals love me. Have always had a way with them. I babysat an African Gray parrot named Babe for a friend while she went to Costa Rica or somewhere out of country. She had had Babe for years. When she came back to pick Babe up, Babe didn't want to go with her. She said from then on he talked in my voice as part of his wide repertoire.

i don't have any talking birds, linda. just sometimes when i am outside, i hear them saying certain things... really, i had a blue heron once fly off in a huff, shouting :shit , shit, shit! but most of the time they warn me or point out things i might have missed otherwise. they go "look there."
a blackbird once at big sur kept telling me "wake up", "wake up"

i know, you think i'm crazy. nope, passed all the tests. i really hear them. happy but that's just because i listen. taking heed is another story.

ha! those kind of pigs eh? once at a music festival a young man had a conversation with our campfire, then he laid down and took a nap next to it, we let him sleep but watched, we were worried about him, gatting too close to fires in that state. but can't you just imagine the things fire could speak of?

oh, those pigs.

there's nothing better than watching the fire burn for relaxing the mind, i think. Maybe that's why i have always loved fireplaces and the campfire. outside, it's a toss-up what i gaze at more; the stars and the depth of them or the fire and its life as it changes.

thanks for the comment. yes, it's a great salad. i am doing it again and again. don't like to use the stove in the summer if i can help it. i get my protein from sushi, even sashimi, and the salad is a perfect counterpart. the trick is the salad dressing. it should be rich with fresh apple pulp, no skin. the rest i said already.

Been hovering between 95 and 107 here for awhile now, although it has "dropped" into the lower to mid 90s the last few days. We will have high temps, really, up through October, at least during the day, although the nights will be cooler. If the weather runs true to form for the last several years. Thanksgiving and Christmas here sometimes sees us in shirtsleeves.

i know linda, i was in houston once for two weeks, then again for christmas. deserts always lose their heat at night. the worst is humid places like florida. where the nights are as hot as the day. right now here it's a comfortable 65 degrees farenheit. easy to get to sleep.

meli heart it's true. the moment it seems to let go and become liquid is very special. but lead (as in for plumbing) is slow and there's no 'moment'. gold on the other hand, is sudden and you can see it release it's structure. the impression of it is unforgettable. everything resists change. everything. but gold surrenders elegantly.
