jamaican patties

those patties were almost unbearably hot, served piping hot and spicey hot at the same time. but at 11:00 a.m. at priory school in kingston when the patty wagon came to the school yard. we were so hungry we got used to them. they were so delicious. i asked him once what he put into them. the patty man said with a laugh, "snakes eyes and puppy dogs tails." faint but they sure were good.

so i decided to make some of my own. here's how.

put on some nice harry belafonte songs and get some ambiance going. happy



set-up for dough



roll the dough in small balls




find a cutter. i used the blender lid. 5 inch diameter.



if this doesn't taste really good and peppery work on it some more. must be hot hot hot.



bake for 35 minutes on cookie sheet at 400 degrees farenheit. i made twenty all together.

below is what you do with the left over marinara sauce. makes a lovely dinner on rice.

here i am again eating. in the hopes that this repetitious eating of mine will not become boring, finally, an absolutely up to date photo of my real self is included. maybe even two.

it's pretty hot here so i am still preparing delectable meals which are cold. this is my favorite for summer... mango avocado salad with about 18 ingredients, (spinach, lettuce etc.) not counting the dressing which has its own eighteen ingredients. anybody can do this. it is delicious.

but i must warn you. it is deceptively time consuming, so make enough for tomorrow like i did. the dressing just gets better and better. it has homemade applesauce, rice vinegar, tamari, apple vinegar, sesame oil, fresh dill,fresh basil, fresh ginger (mashed without skin in a pestle). take some toasted sesame seeds and sea salt and put them in the coffee grinder. sprinkle this on the individual salad. and enjoy. happy



use a fresh croissant. you'll be glad you did. romaine lettuce, bemuda onion and cream cheese, mayo, not much.




more than i can eat. my eyes are always bigger than my stomach. cool

it's kind of a sloppy handful but that's half the fun. happy









and don't try to kiss anyone. that burmuda onion and the scallion rounds will make your partner run.

presenting.... marinara sauce

one of my favorite young friends, halldor dropped by last sunday. i had promised him a dinner of potstickers and mussels marinara. we talked a lot and listened to all kinds of music. finally, got down to making the 'potstickers' and re-doing my latest discovery for a salad.... romaine lettuce with avocado, mango and nectarines (all the usual suspects also... scallions, capers, radishes and a dressing i immitated from the sushi house} someday i will divulge the secret of that dressing, if i can remember what i did.)

anyway, we finally ate around midnight lol and we were really hungry by that time.

we never got to the mussels. the next day i experimented with the marinara sauce which i recommend everyone try. it's really easy and fast.

what started my obsession with marinara is the plethora of tomatoes i have grown in my little back yard. and peppers. i made gazpacho twice.

i also learned from remembering that someone said the easy way to skin a tomato is to freeze them. i did. and it worked.


when the tomatoes thaw out, just squeeze them and the skin comes off.

so here is the show and tell for mussels marinara. chef

this is adjustible, just put what you have. for instance if you don't have scallions, use shallots. mushrooms would be cool too. marinara is supposed to be a little hot. i mean peppery hot. and served piping hot with buttered artisan bread. yes



add the capers after an hour of simmering.



the full dinner should really include the avocado, mango salad. and the artisan bread for sopping up the juices.


salad: with the magic dressing. i finally figured out how to make. but now i forgot what i did. i know it has mashed apple with no skin and rice vinegar, a dash of tamari sauce and fresh ginger juice. it is so delicious it makes you eat every bit of your 'rabbit food'. greens i mean.
