meli's baklava

the baklava was a great success at the party. now i just wish these pictures were a little bit bigger. if you have any questions, just ask cool


not going to say much except it was a lot trickier than i thought. but i made my mistakes and the next time it will flow like a 'pianola' and the results will be perfect.

here's meli's recipe, which i followed except for the size of the pan, and i added some butter plus the pam.

baklava from meli

32 servings (serving size: 1 piece)
Ingredients
Syrup:
1 1/2 cups honey
1/2 cup water
1 tablespoon fresh lemon juice
3 whole cloves
1 (3-inch) cinnamon stick

Filling:
2/3 cup unsalted pistachios, coarsely chopped
1/2 cup blanched unsalted almonds, coarsely chopped
1/3 cup walnuts, coarsely chopped
1/4 cup sugar
3/4 teaspoon ground cinnamon
1/4 teaspoon ground cardamom
1/8 teaspoon salt

Remaining ingredients:
Cooking spray
24 (14 x 9-inch) sheets frozen phyllo dough, thawed
1 tablespoon water
Preparation


To prepare syrup, combine honey, 1/2 cup water, juice, cloves, and cinnamon in a medium saucepan over low heat; stir until honey is completely dissolved (about 2 minutes). Increase heat to medium; cook, without stirring, until a candy thermometer registers 230° (about 10 minutes). Remove from heat; keep warm. Remove solids with a slotted spoon; discard.

Preheat oven to 350°.

To prepare filling, combine pistachios and next 6 ingredients (through salt); set aside.

Lightly coat a 13 x 9-inch baking dish with cooking spray. Working with 1 phyllo sheet at a time (cover remaining dough to prevent drying), place 1 phyllo sheet lengthwise in bottom of prepared pan, allowing end of sheet to extend over edges of dish; lightly coat with cooking spray. Repeat procedure with 5 phyllo sheets and cooking spray for a total of 6 layers. Sprinkle phyllo evenly with one-third of nut mixture (about 2/3 cup). Repeat procedure with phyllo, cooking spray, and nut mixture 2 more times. Top last layer of nut mixture with remaining 6 sheets phyllo, each one lightly coated with cooking spray. Lightly coat top phyllo sheet with cooking spray; press baklava gently into pan. Sprinkle baklava surface with 1 tablespoon water.

Make 3 even lengthwise cuts and 7 even crosswise cuts to form 32 portions using a sharp knife. Bake at 350° for 30 minutes or until the phyllo is golden brown. Remove from oven. Drizzle honey mixture evenly over baklava. Cool in pan on a wire rack. Store covered at room temperature.

cut up. you need a pretty sharp knife





that's all there is to it. 30 minutes in the oven at 350 degrees f more like 40 in my oven to get the golden color.

I've got my phyllo dough thawing. Mom told me she had walnuts, so I didn't get any yesterday - she failed to mention she only had 1 TBS! lol I have to make 1 more trip to town tomorrow and then I'm baking it. I absolutely love baklava! smile

i had that same problem with the pictures. way out of proportion. i finally had to put them on my photobucket site and embed them that way.

Yep, I've tried all that. Even removed Opera for the night, then reloaded it this morning. Still the same. No pics, no avatars. I'm on my IE again. I was told in the help forum there may be a problem in My Opera server. Now I wonder if that means 'my' server, or opera server.

Scott, the baklava looks great. I can see the pics on my IE browser.

people people people the pictures are too small go to the album for details. and if you do this at home.... make sure you use a rightsize baking pan or all the amounts measured won't match.
i used an 8x8 inch dish. should have been 13x9.

anyway, it was delicious. i left the corner pieces and got to take home two chunks for myself plus a sampling of all the other deserts... i'll never finish them all before new years day. happy

Angeliki, I make the baklava this evening. YUM! I couldn't find the pistachio's, so substituted figs, and it is delicious! That was easier to make than cookies - and much tastier! heart

forgive me. i am so pissed. i just wasted two hours watching the worst movie ever made.... "the golden compass" how many millions of dollars were wasted making a movie with no 'content' whatever.

i just wish the producers had walked around skid row and distributed the money they invested so unwisely to the poor instead.

I did watch 60minutes all on Barack obama, then I exchanged ideas with a very dear friend and of course my "geek" in me couldn't resist and I did read all about HAA,SA-60,SKYCAT-20 airships for some reason fascinate me! lol
All of them will fly at the end of 2009 but I couldn't wait till then p

i know kid, i follow the 'thumper principle' generally, but this movie was so bad, someone had to denounce it.

funny you should bring up the subject of faith... my weakest suit.
i've been known to pray but i am painfully aware of my lack of faith. i have even prayed to feel real faith. but so far no miracle. a hug from a real friend feels like heaven to me. and when a friend disapoints me, i am in hell. just the way i am made.
