At what age do they get their long fur?

The baby bunnies in the picture were about 2½ months old. But the fiber is so fine it tends to matt a lot. Most people don't start to use the fur from a baby until they are 5-7 months old. BUT it is good for felting. I've spun it but I always hand wash the scarf from the baby hair in totally cold water, and take care never o handle it in a rough manner.
