-1 zucchini grated
-2 carrots grated
-4 tbsp fresh breadcrumbs
-1 tbsp lemon juice
-3-4 flounder fillets
-Salt and black pepper
-Preheat the oven to 400 degree F, mix together the zucchini and carrots in a bowl. stir in the breadcrumbs and lemon juice then season with salt and pepper.
-Lay the fish fillet, skin side-up, on a board and divide the stuffing among them, spreading it evenly.
-Roll up to enclose the stuffing and place in an ovenproof dish. Cover and bake for about 30mins, or until the fish flakes easily. Serve immediately with rice or potatoes.
