Australian damper bread

Есть такой австралийский бездрожжевой хлеб - дэмпер, который пекли изначально на открытом огне, в котелке или в переносной духовке во время привалов. Он относится к так называемым "быстрым" хлебам (как и содовый ирландский хлеб - обязательно испеку его в следующий раз). Без дрожжей (вместо них - пекарский порошок) и без расстойки. Вымешивается и сразу в печку! Не знаю, каким он должен быть на вкус в действительности, но этот на вкус не плох.

Кстати, если молоко заменить пивом, то получится другой вариант австралийского хлеба - beer damper.

Damper was the name given to the bread cooked by early settlers in Australia. The name
apparently comes from the “dampening,” or filling, effect it had on the appetite. Damper was
originally made from just flour mixed with water, kneaded into a round, flat cake, and baked in
the ashes of a campfire. Salt, milk, butter, and baking powder were added when, and if, they
were available.
INGREDIENTS
2 3⁄4 cups bread flour
1 cup whole-wheat flour
4 tsp baking powder
1 tsp salt
1 2⁄3 cups milk,
plus extra to glaze
2 tbsp unsalted butter, melted
Нow to cook:
1. Sift the flours, baking powder, and salt in a large bowl, then make a well in the center.
2. Stir the milk and the melted butter together in a separate bowl. Pour the milk-butter mixture
into the flour well and quickly mix in the flour from the sides of the well to form a soft, sticky dough.
3. Turn the dough out onto a lightly floured work surface. Knead the dough lightly until smooth
and soft, about 1 minute.
4. Shape into a round loaf and place on a buttered baking sheet. Brush with milk and
sprinkle with whole-wheat flour.
5. Cut a slash, 1 inch deep, across the top of the loaf, then another in the opposite
direction to make an “X.”
6. Bake in the preheated oven for 15 minutes, then reduce the oven to 350ºF and bake for
25 minutes longer, until golden and hollow sounding when tapped underneath. Cool on a wire rack.
