One more turkish dish called "TURLU" that my mother-in-law taught me how to cook. It is very easy and delicious! Actually I am sure that they cook somethink like this vegetable ragout in all countries... Here is Tusrkish variant: Еще одно блюдо, которое меня научила готовить моя свекровь. Как говориться просто, но со вкусом! Не уверена, что это чисто турецкое блюдо, так как рагу можно встретить в каждой стране. Вот это турецкйи вариант:
aubergine, onion, potatos, vegetable marrow and beef (or chicken).
баклажаны, лук, кабачки, картофель, говядина (или курица)
everything should be cut into small cubes
все поеразть кубиками
add some tomato past mixed with water for color (turkish people don`t like white color food, fooв should have COLOR, that`s why they use tomato paste not only for taste but also for color)
разбавить томатную пасту водой и залить рагу (турки не любят безцветную еду, белые соусы и т.п., поэтому очень часто в пище используется томатная паста не только для вкуса, но и для цвета)
put the baking tray into the oven for about 1 hour
постваьте противень в духовку примерно на 1 час
This food Turkish usually serve with pilav (rice with little fried noodles)
это блюдо обычно подается с пловом (рис и жареная лапша)

MOUSSAKA FROM ANGELIKIS KITCHEN

Ingredients
2 large eggplants cut into 1 inch cubes
1 large diced onion
3 cups tomato sauce
1 cup olive oil
2 teaspoon sugar
thyme
oregano
500 g (1lb) ground beef
500 g (1lb) ground lamb
1 glass dry red wine ( to keep the recipe very Ioannian - use Mavrodafni wine - if you don't have it - use Bordeaux)
1/2tspoon allspice
dash tspoon nutmeg
dash cinnamon
salt and pepper
1.5 kilo potatoes
sweet paprika
1 cup Kefalotiri cheese (if not available make a mix of Feta cheese and Parmesan)
Directions
Heat 1/3 cup oil and add eggplants and diced onion. Fry them at medium heat until onion is translucent. Add the tomato sauce and boil it gently at low heat to reduce. Add 1/2 cup wine, sugar, salt, pepper, oregano and thyme. Set it aside.
Heat 1/3 cup oil and fry the ground beef and lamb with the allspice, nutmeg and cinnamon, add salt and pepper and in the end, the last 1/2 cup of wine. Set it on the side.
Fry the potatoes in the remaining 1/2 cup oil. Sprinkle with salt and paprika.
In a large oven dish layer in the following order: potatoes, meat mixture, eggplant mixture and repeat to end with the eggplant mixture.
On top of the dish sprinkle with the cheese.
your "turlu" is exactly the way i make it too...
i only bake fresh bread that day as well,
the combination is heavenly
