Apple Pie! (Again! XD)

After a cold and dark winter in my recent blogging life, I’m finally back to writing. And this time, I make a promise here: write at least 5 posts until Xmas!

Last week was a real rush to me, with some pending issues from my trip to Africa, apart from usual home issues, such as housekeeping and dishwashing... Hehehe

But after lots of work during the week, the weekend was great fun. And the reason for this: a home party for close friends, to celebrate xmas and make a Secret Santa. And continuing our tradition, we had dinner first, then did the Secret Santa (In fact, a Stealing Santa), and finally the dessert!
A quick flash through the menu: Doritto's (excellent snack to entertain) with dips of aioli and cream cheese with herbs. For the “main dish”, if I may call it that way, Hot Dogs: French roll and usual hot dog bread, weenies (beef & pork and chicken), caramelized onions, toasted cashew nuts, mashed potatoes, ketchup, mayonnaise and mustard.

Traditional Apple Pie

Hi, guys!
Once again, this will be a post half in Portuguese, half in English. And this is because it's time, once again, of the Chá da Tarde challenge! This time, our theme recipes are for pies and filled cakes! So, I decided to use my favorite apple pie recipe, but with a more traditional look!

Oi, pessoal! Esse é o meu post dedicado ao Desafio Chá da Tarde de final / começo de ano! Lembrando que ele é desenvolvido pela Leila, do Delishville, e pela Cris, do From Our Home to Yours. Novamente agradeço por estarem se empenhando no desafio! E parabéns, pois realmente, tem muita gente que acompanha vocês nisso!

Apple Streusel Pie

Today was an election day, here in Brazil, and we all had to vote for our mayors. The interesting thing is, because of this, in most cities, the selling of alcoholic beverages is forbidden, both in stores, and in restaurants and bars. That makes this a perfect day to gather the whole family and make a huge party in someone's house. And this time, it was in mine (Actually, my mother's. Heheh). Strangely enought, there was no drop of alcohol during the party, so the prohibition (or "dry law", as we call it in here) doesn't make a single difference...
I asked mom if I could do something for dessert, to what I received only an "ok, ok...". The answer was not too much of an incrntive, but I kept on with this idea: "So, would you like something special?"... After a long silence and an almost scolding look at me, she said "I really liked your cousin's girlfriend's Apple Pie".
At first, I thought of baking my traditional apple pie (which I have last made almost 4 months ago...), but then I thought: I must do sth better than her! Therefore, I need a special recipe. And I spent this week thinking and searching the web for a good apple pie, until I got to this nice option in AllRecipes.com, and made some slight modification.
The final result? Unanimous acceptance, and many people willing to have extras, but unfortinately the pie was over.... u.u But they'll be able to get the recipes here!

Apple Cherry Cobbler

Hello, all!
This will be a quick post, early in the morning, just so this blog doesn't seem to be abandoned... Sorry for that!
Last tuesday (Yup, I should have posted this before...) I called my gf home, to have dinner, and had some apple left overs from the Apple Creme I posted bofore. So, I decided to make something with it. Actually, this is a very easy recipe, as well as very quick to be made. And you can use many other fruits you want, as the filling for this cobbler.
I am not very much a connoisseur of this subject, but the general differences between a cobbler, a pie and a cruble are related to the pastry used... The pie, as most of you should know, uses, at least, one layer of pastry underneath the filling. Besides that, most of them also have one topping layer of pastry. For the cobbler and the crumble, on the other hand, you you usually have no pastry underneath. The cobler should have some kind of cakey/biscuit topping, and the crumble a more crunchy topping, usually with nuts or some grains. (Please, guys, send me a comment, in case I'm wrong, and I'll ve happy to correct it!)
But well, this is one kind of recipe you can prepare in 15 minutes, and leave it in the oven, while the dinner is going on! Enjoy it!

Apple Cherry Cobbler
Makes 4

4 Apples, peeled, seeded and thinly sliced (I used fuji apples)
50g Cherries au Maraschino, diced
75g crystal sugar
1 tsp ground cinnamon
1 cup flour
1/4 cup white sugar
1/4 cup brown sugar
1/2 tsp baking powder
75g butter, chilled and diced
1/4 cup boiling water
Sugar, to sprinkle


Pre-heat the oven at 200 degrees celcius.
Put the apples, cherries and crystal sugar in a pot over medium fire. Mix gently and in some 5 minutes, when the apples start to soften, add the cinnamon, give one last turn, to dissolve it, leave for 5 more minutes and you'll be done with it.
In a bowl, put the flour, sugar, brown sugar and baking powder, and then, mix well. Add the butter and use your fingers to incorporate it into the dry ingredients. keep mixing until you have a slightly crumbling mixture. Add the boiling water and, this time with a spoon, finish mixing, and you'll have your topping.
To assemble, in one medium glass pan, put the apple-cherry filling and spoon over it your topping. Sprinkle it with sugar and take it to the oven for nearly 35 minutes, or until you can insert a toothpick in the cobbler topping and it leaves out dry.

Apple Creme

Last week, I have posted some late recipes, and this is the last one of that cicle... (Yay! Now back to the kitchen)
By Wednesday, I had some fresh cream in my fridge, and I wouldn't be able to wait till weekend. So, I needed to do something with it before it spoils (This is one of the expensive ingredients, here in Brazil). The problem is I only knew two things to do with fresh cream! Ice cream and custards. Ice cream would be a good option, weren't my freezer so full. So, I had to go for a custard. Searching on the web, I had found some good recipes, but custard isn't really a thing you need to follow a recipe, but just a general guidance of how would your combination be.
But well, just a custard? That's not really delicious, I must say. So, there I went to my fridge and search for a new add-on to that... Lucky enough, I had some apples. Apples go really good with custard (that's a sort of European taste, I think... Hehehe). In the end, I had two final results: The first one was a full pie sized of my cream, which later I turned to 6 ramekins and toped with a caramel toffee with fleur de sel. I will put all the recipes here, and feel free to choose which ones you'll use to make your own combination!
