Cuisine Of The Month

Food. A necessity of life. You have to eat to live... And some live to eat. Whatever your personal philosophy on food, you cannot deny the importance it has in our lives.

Whether you a little or a lot, it's good to enjoy what you do eat. A good dish feeds not only our bellies, but our souls.

I've taken it upon myself to detail one particular cuisine that appeals to me, once every month.

Why?

Because food is good.

September's Cuisine:

Kimmie's Coffee-Chocolate Chip Muffins
(Makes 12)


Bitter and sweet, moist and fluffy muffins, you either love them or hate them.
You will need:

1 and a half cups (200g) plain flour

1 and a half teaspoons baking powder

Half teaspoon salt

Half cup (100g) margarine or butter

Quarter packed cup (50g) light muscovado sugar

Quarter cup (60ml) milk

Quarter cup (60ml) water

1 large egg

1 teaspoon vanilla essence

1 heaped tablespoon instant coffee

100g dark chocolate chips


Put the milk and the water into a cup or mug, add the coffee and stir until it has dissolved. Set it aside.

Sieve the flour, baking powder and salt together into a bowl and mix. Set the bowl aside, too, for now.

In another bowl, beat the sugar and the butter/margarine together until light and fluffy. Add in the vanilla and the egg, and beat again until thoroughly combined.


Once you've done that, pour the flour mixture into the butter mixture, add the chocolate chips on top, and pour the coffee mixture all over it.


Gently fold all your ingredients together until they are just combined, and spoon into muffin pans.


Bake at 180 celsius for 12-15 minutes.


Once cooled, you can store in an airtight container or freezer. They're best served warm - a few seconds in the microwave does the trick. If you want something extra special, put a scoop of vanilla ice-cream onto your warm muffin and eat with a spoon.

Carol - thank you :D . I'm very proud of this recipe - it took a bit of tinkering with to get it just right, but it was worth it :happy: .

Yes Kimmie, I do. If I were to make these I'd only put half the coffee in them. But the mix of chocolate, coffee and muscovado sugar... Mmmm... yum! *drools a little bit*

It says "Hleb i kifle", meaning Bread and rolls. The most beautiful thing I can find there is tart with various fruits :happy:

Kitty - oh, cool, so you could eat it if it's half-coffee then? I love muscovado sugar. I use it whenever I can for baking! :D .

Dark - whoa, what a big bakery! :eyes: the best thing I like to buy at bakeries is a danish pastry, it is a spiral, with small fruits and sweet things (raisins, crystallised orange, angelika, lemon) all inside :chef: .

Moe - I don't think I'd call you bitter. You can be very sweet at times though awww

Well, if the brown really is unrefined sugar, use that, but a lot of the time, it's refined (white) sugar dyed brown again. Homer: Doh!

Aadil - as Gavin says, it needs to be unrefined brown, really. You know, very soft, fine brown sugar. But I imagine you can use any sugar, it just may not turn out quite as well :yes:

Nick - you don't like coffee either? :faint:

Haha, it's not that, I just didn't realise! To be honest, I don't like to drink coffee much. But I do like it in food :D

Kimmie - cool :happy: In fact, I've always liked those chocs in the box that have the coffee flavoured filling (even tho' I'm allergic to chocolate)...so in food is definitely something I'd have a go at..*reaches over and takes one from the plate*

I've had home-brewed beer that used coffee in the brewing process and that was OK (rather like Nigerian Guinness, but not quite as effective) - so - you know...I don't have any hangups about eating it like this :smile:

I love coffee chocolate! You're allergic to chocolate? Oh noes :eyes: . Is it the cocoa you're allergic to?
Coffee-brewed beer sounds very strange - I've never heard of that before :sherlock:

Y<o>es allergic to chocolate but not *fatally* - it makes me itch like crazy for days....the better the quality, the worse it is (which in reality means I can eat a few squares of Cadbury's without a problem)...I don't actually know if it's the Cocoa or what....I just don't eat it :smile:

You can't 'taste' the coffee in the beer, it just gives it a kinda burnt flavour - I think it's just a cheap shortcut to achieve a quality that *real* brewers can get :smile: You can find various recipes that include it if you google *home brew* or something like that :lol:
