Okay, so I have 4 girls right, and my oldest says "Mom, do you know what I want for X-Mas?" she goes on to tell me, "Mom, I wanna go to Idaho to see my Auntie Ruby." Made me cry, we all left Idaho to be with my husband's family, and now that it's closer to christmas, I'm not sure what to do, my kids and I wanna go home. I think I will just have to run away...?

Baked Apple Halves With Maple Cream

apple, recipe
2 large red apples, halved lengthwise and cored with a melon baller
4 tsp margrine (cube cut into small pieces)
1 cup orange juice (drink half now, save half for recipe {NO JOKE})
1 Tbsp apple cider viniger
1/4 cup evaporated milk
2 Tbsp pure maple syrup
*TIME=1 hour*
*SERVINGS=4*

1: PREHEAT oven to 350ºF. CHILL small mixing bowl for evaporated milk.
2: PLACE apples flesh side up in 8" by 8" (square or round) baking dish and dot with margarine. Pour half cup orange juice and vinegar over top, cover with foil and bake 40-45 minutes until apples are soft, but still hold their shape.
3: REMOVE apples to large plate and pour juice from dish into small saucepan. Bring to a boil and reduce 3 to 4 minutes until thick and syrupy. Reserve 4 tablespoons.
4: WHIP milk and maple syrup together in chilled bowl with electric mixer at high speed 3-5 minutes until mixture thickens.
5: TOP each apple with 1 1/2 tablespoons of the maple cream and drizzle with 1 tablespoon of the reserved fruit syrup.

NUTRITIONAL INFORMATION PER SERVING: 145 calories, 1 gram pro, 27 gram carbohydrates, 4.5 grams fat, 1.5 grams saturated fat, 5 mg cholesterol, 3 grams fiber, 51 mg sodium.

The reason why I hate holidays (several actually)
1:
no body celebrates the holidays the way it's suppose to be celebrated.
2:
it's all about trees, and santa clause..and crap that we really don't need.
3:
who cares about other people living in the house. IT'S ALL ABOUT THAT DAMN WOMAN WHO THINKS THAT EVERYONE HERE SHOULD BOW DOWN AND OBEY HER. It's time for some rebelling. My kids are doing it. Why can't I?

Cinnamon-Ginger Applesauce

4 large empire apples (because they break down easily) peeled and cut in cubes
1/2 cup water
2 tbsp b. sugar
2 tbsp freshly squeezed lemon juice
1/4 tsp ginger
1/4 tsp freshly grated lemon zest
1/8 tsp ground cinnamon
45 min.
4 servings
place apples, water, sugar, lemon juice, ginger, lemon zest, cinnamon in 2-quart saucepan and bring to a boil. lower heat to a simmer, partially cover, and cook for 20 min. mash with potato masher or fork and cook uncovered for 5-10 min. longer until thick.
enjoy your apples!!!
