Zucchini Pancakes

Do you know Rösti? That fried potato "pancake"-thing?

I thought I would try to make something similar, but instead of potatoes, I decided to use zucchini/courgette. It turned out quite well, actually, so I thought I would share with you guys. :happy:

ZRS presents:

Zucchini pancakes

Ingredients:
1 large green zucchini / courgette
1 small onion
2 eggs
½ cup of parsley
100 gram wheat flour (3.5 Oz.)
salt & pepper


How to do it:

Wash the zucchini and grate it. Peel the onion, and chop it.

Mix everything into a thick batter in a bowl.

Warm some oil on a frying pan and put tablespoonfulls of batter onto the pan. One tablespoon makes one pancake.

Fry them until they are golden brown.

They taste really good as a side dish, and they are delicious cold too, so save them if you don't eat them all.

I think I fried these about 5 minutes on each side. :up:

@ Aadil ~ Zucchini is a crappy word. We call them squash here. :D

Don't worry, I hadn't forgotten about the Zoo photos I promised - in fact, I think the post is coming up very very shortly. :yes:

It would be so much more fun making the ZRS posts if you could actually taste the results of my cooking. :happy:

@ Rose ~ The zucchini doesn't taste of much by itself, but with the onion and parsley it's good! You can use other herbs instead of parsley too, if you prefer. :smile:

Then you could give special cookies to a certain :troll:. Of course, what makes the cookies so special would be a certain extra ingredient (:cough: arsenic :cough:) you added to them. :devil:

Might we see the pictures on Friyay? Or do we have to wait until Caturyay? :happy:

I was thinking of something like the entire span as well. For instance

"Difficulty: Easy
Time: 10 to 15 minutes"

or something like that. I'd be awesome :D

I had freaked out a little bit in recent times when sampling Zucchini Muffins. Okay, so I just had one. While it wasn't bad, something just prevented me from jumping at the opportunity to wolf down some more.

But, these Zucchini Pancakes sound better, more like a meal instead of an experiment. :lol: Obviously the Maple Syrup will be nixed and instead more likely replaced with Salsa, right, Zaph?

Hi Pussy Cat :smile: Mmmm - they look yummy :up: I love Rosti (and any kind of Potato thing)...and must try these. Hey - are you familiar with Carrot Cake?? You can do the same thing with Zucchini too - it's delicious (although disturbingly green). I'll try & find the recipe...:heart:

@Pussy Cat : Walnuts? I laugh in the face of Walnuts - Hahaha! No - Carrot Cake is forever a Walnut-free zone :up:

Walnut free Carrot Cake is in fact, my favourite Cake :smile:
....unlike Banana Cake, which ties with any Cake made from recycled carpets and newspapers as my least favourite cake.

I haven't got the Zucchini cake recipe at hand, but will search for it...it's indoors somewhere....:smile:

hello again Pussy Cat :smile: - OK, well, here's one of the recipes for Courgette (Zucchini) cake (I don't think this is the original one I had, but it's close enough and I'll give you the original if & when I find it :smile: ) :

Ingredients :
3 cups grated Courgette (Zucchini)
1 cup oil (canola is good)
1 and half cups brown sugar
3 eggs, well beaten
2 and half cups of Flour
1 and half teaspoons baking powder
1 teaspoon Baking Soda
1 cup chopped Walnuts (personally I'd leave these out, but...)
1 and half teaspoons of Cinnamon
1 and half teaspoons of Nutmeg
1 teaspon Salt
Green colouring, as desired (:lol:)

How to :
1) Mix courgettes, oil, sugar, eggs and spices
2) Sift together flour, baking powder, soda and salt
3) Gradually fold dry ingedients into Courgett mix and add walnuts (if you're using them)
4) Grease and line a deep 9 inch cake tin (or an alternative container you use for your other cakes - up you, right? :smile: )
5) Bake at 350f (about 170c) for 1 and a quarter hours

cool before turning out

Ice with (lots of) cream cheese icing (just like with carrot cake...mmm...yum)

And - here's the Chocolate version :

125g butter
1 cup brown sugar
half cup white sugar
3 eggs
2 and a half cups flour
Half cup yogurt
Half cup cocoa
2 teaspoons baking soda
1 teaspoon cinnamon
Half teaspoon mixed spice
Half teaspoon salt
1 teaspoon vanilla essence
3 cups (350g) grated zucchini/courgette
half to 1 cup good quality chocolate pieces (optional)

Line 25 cm square tin (or whatever you use, right? :smile: )

Cream butter and sugar.
Add eggs one at a time with a spoonful of flour mixture.
Add vanilla and yogurt and stir well.
Sift in dry ingredients and stir in zucchini.
Pour into tin, and sprinkle with chocolate pieces (if using them)

Bake at 170C (approx 350f) for 45 minutes.

**NOTE : in NZ, 1 cup = 250 ml or 8 fl. oz. :smile:

I cook with gas - and bake with electricity. I really prefer gas, it's so much easier to deal with, but it's almost impossible to get gas ovens here. So, gas on the top, electricity in the bottom. :smile:

Gas ovens are not as good as baking. The best results are obtained with a thermo-fan oven. :up:.

I love cooking with gas - so much more controllable than electricity. I'd choose that every time, given the choice - but, OK, electric ovens are good - that's what I use now, along with an electric hob, which I rather dislike. Just wondered :smile:

Electric hobs suck :smile: How about "So, gas on the top, electricity underneath" :smile: That covers everything and doesn't leave you wide open (ohhh jeez, I mean...ummm...vulnerable) to smartass potshots :smile:

I have a two plate electric 'mini kitchen' oven. About the size of a microwave. But I also have a portable camping stove that I like to use. Gas is much better for stove top cooking. It responds to controls a lot better. But it's sometimes expensive, esp. Since most places around here don't have piped gas. (some parts of Johannesburg have piped gas).
Mostly, we rely on Cadac canisters for gas here. So most people either use electric or, if they don't have electricity, parafin.

@Aadil - yeah :lol: I know all about that - where I live we don't have piped anything, water or gas or services such as sewage (I have a septic tank) - although we do have electricity :smile: I'd really like gas, and - as I've said many times - town water tastes awful when you're accustomed to drinking pure sweet rainwater :smile:
