Zucchini Pancakes

I thought I would try to make something similar, but instead of potatoes, I decided to use zucchini/courgette. It turned out quite well, actually, so I thought I would share with you guys.
ZRS presents:
Zucchini pancakes
Ingredients:1 large green zucchini / courgette
1 small onion
2 eggs
½ cup of parsley
100 gram wheat flour (3.5 Oz.)
salt & pepper
How to do it:

Wash the zucchini and grate it. Peel the onion, and chop it.
Mix everything into a thick batter in a bowl.
Warm some oil on a frying pan and put tablespoonfulls of batter onto the pan. One tablespoon makes one pancake.
Fry them until they are golden brown.
They taste really good as a side dish, and they are delicious cold too, so save them if you don't eat them all.

Don't worry, I hadn't forgotten about the Zoo photos I promised - in fact, I think the post is coming up very very shortly.
It would be so much more fun making the ZRS posts if you could actually taste the results of my cooking.
@ Rose ~ The zucchini doesn't taste of much by itself, but with the onion and parsley it's good! You can use other herbs instead of parsley too, if you prefer.

@ Sunny ~ I like zucchini muffins as well, but they are like, cakes. This goes with meat, or yes, salsa. It's a dish, not a cake, hence the name.

@ Mr. Rinse ~ I am very much familiar with carrot cake (please tell me you don't put walnuts in it!). As for the zucchini cake - yum - I don't care if it's disturbingly green, in fact, I think I'd love that. So please, yes, do share.

Walnut free Carrot Cake is in fact, my favourite Cake
....unlike Banana Cake, which ties with any Cake made from recycled carpets and newspapers as my least favourite cake.
I haven't got the Zucchini cake recipe at hand, but will search for it...it's indoors somewhere....

Ingredients :
3 cups grated Courgette (Zucchini)
1 cup oil (canola is good)
1 and half cups brown sugar
3 eggs, well beaten
2 and half cups of Flour
1 and half teaspoons baking powder
1 teaspoon Baking Soda
1 cup chopped Walnuts (personally I'd leave these out, but...)
1 and half teaspoons of Cinnamon
1 and half teaspoons of Nutmeg
1 teaspon Salt
Green colouring, as desired (
How to :
1) Mix courgettes, oil, sugar, eggs and spices
2) Sift together flour, baking powder, soda and salt
3) Gradually fold dry ingedients into Courgett mix and add walnuts (if you're using them)
4) Grease and line a deep 9 inch cake tin (or an alternative container you use for your other cakes - up you, right?
5) Bake at 350f (about 170c) for 1 and a quarter hours
cool before turning out
Ice with (lots of) cream cheese icing (just like with carrot cake...mmm...yum)

125g butter
1 cup brown sugar
half cup white sugar
3 eggs
2 and a half cups flour
Half cup yogurt
Half cup cocoa
2 teaspoons baking soda
1 teaspoon cinnamon
Half teaspoon mixed spice
Half teaspoon salt
1 teaspoon vanilla essence
3 cups (350g) grated zucchini/courgette
half to 1 cup good quality chocolate pieces (optional)
Line 25 cm square tin (or whatever you use, right?
Cream butter and sugar.
Add eggs one at a time with a spoonful of flour mixture.
Add vanilla and yogurt and stir well.
Sift in dry ingredients and stir in zucchini.
Pour into tin, and sprinkle with chocolate pieces (if using them)
Bake at 170C (approx 350f) for 45 minutes.
**NOTE : in NZ, 1 cup = 250 ml or 8 fl. oz.

I love cooking with gas - so much more controllable than electricity. I'd choose that every time, given the choice - but, OK, electric ovens are good - that's what I use now, along with an electric hob, which I rather dislike. Just wondered

Mostly, we rely on Cadac canisters for gas here. So most people either use electric or, if they don't have electricity, parafin.
