Blueberry Pancakes

Sometimes it's nice to pamper yourself - or even better - to be pampered. Especially on Sunday mornings. I like pancakes, I just don't eat them very often. So for me, having pancakes on a Sunday morning is a very special treat. I'll share my recipe with you, so you can make pancakes too, if you like!

Zaphira's Blueberry Pancakes for Sweet Sunday mornings
(makes 14)



You'll need:
400 ml buttermilk (13.5 fl. Oz.)
1 egg
250 grams flour (8.82 Oz.)
1 teaspoon baking soda
2 teaspoons sugar
Half a teaspoon salt
200 grams blueberries (7 Oz.)

How to do it:

Mix the buttermilk and the egg. Use an electrical mixer, that's easiest.

Add the sugar and the salt and mix again. Mix the baking soda with the flour and add it. Whisk thoroughly.

Now add the blueberries and stir with a spoon. Don't mash the berries too much, if you can avoid it.

Heat up a frying pan (or a blinis pan if you've got one). Melt a bit of butter on it.

Put tablespoons of dough on the frying pan once it's hot. I use two tablespoons for each pancake. Make sure that there are blueberries on all the pancakes.

After about 2-3 minutes bubbles will appear on the upper surface of the pancake. When that happens, flip the pancakes with a spatula. Cook for another 2 minutes.

Serve hot with syrup, honey, jam, sugar or Nutella.

If you don't eat them all, you can store the rest of them in the freezer.

Um ... semi-sweet chocolate chips is 'WAY mo' bettah than blueberries.

Spagg ... LOL ... you must have been served the Yank creation, usually called "hotcakes" or "flapjacks". These things, as far as I can tell, originated in the Old West, when the chuckwagon cook would turn them out as a meal, usually with a couple of fried eggs and a generous helping of thick-sliced bacon. In the open, with a full day of work ahead, this is what kept these lads going.
I first became acquainted with smaller pancakes in a little restaurant in New Mexico, where I was served "Silver Dollar Pancakes", which were about the size of the coin they were named for. I've loved the little ones ever since.

@ dW ~ I've never had chocs in my pancakes, but I must admit that I think I prefer the blueberries over the chocolates. If I feel like chocolate anyway I'll just smear Nutella on them. bigsmile

We tend to have them big in the UK, DW. They're not nice. Not with eggs and bacon though, it's usually lemon and sugar here for some reason.

Kitty, I've never actually successfully made little pancakes, but with this recipe, I damn well might.

I think you should at least give it a go. My frying pan is big, and I can fry five pancakes at a time. With a slightly smaller pan I'd make it four.

I will at some point, but blueberries are not cheap and buttermilk is not a usual item for us and we're undergoing a few months of stricter financial restraint very soon.

Blueberries are usually pretty expensive here too, but they were on special in my supermarket for only 8 DKK (less than a £), so I was delighted! I love blueberries!

Anyway - I hope that the financial restraints will be short!

The smaller ones (a k a Pikelets) work *very* well with sweetcorn (and a little grated cheese, if you like) in the mix instead of blueberries (and more salt, less sugar of course)....also a fairly common weekend lunchtime snack item in NZ (and Australia too, I expect) smile

I'm keen on Crepes I must say, although I very rarely make them....but I do a really nice crepe filled with strips of cooked carrot, bits of broccoli & tomato, baby spinach leaves and covered with a nice cheese sauce smile

If we're still talking about mornings then I prefer sweet to savoury. Pancakes over both chicken, pizza or beer. yes
Even eggs and bacon isn't really my style in the mornings. Let me have that for lunch instead please. bigsmile

I can't eat greasy stuff for breakfast <shudder> - not early anyway - it'd need to be at least 10 am before I'd feel like that sort of thing, and I'm usually up at 5.30 - all I want at that time of day is tea and a banana - oatmeal is the best food for me in the mornings, as I've learned by experience. I *hate* feeling full and heavy in the stomach, you know what I mean? It slows me down and I don't enjoy it at all smile

lol lol Classy!!! lol I once made a cheesecake like that, threw it out to the birds and it just lay in the garden, totally unpecked, until it started to piss me off and I ran over it with the lawnmower (17 or 18 times) and turned it to mulch lol
