ZRS presents Zaphira's vanilla cookies with marzipan:
100 gram grated marzipan (approximately half a cupful)
125 gram sugar (half a cupful)
1 teaspoon vanilla
275 gram wheat flour (1 cupful with top)
175 gram butter (3/4 cupful)
1 egg yolk
1 large pinch baking soda
How to do:
Mix the grated marzipan with sugar and vanilla. It's far the easiest to do all the mixing in this recipe with your hands. A spoon or a mixer just won't do.
Add the flour and mix. It'll be a very dry mixture.
Add the butter and mix. It takes a long time to mix the two things. When it feels gritty, add the egg yolk and mix until you've got a dough that looks like this.
Store it in the fridge for at least an hour.
Make rolls of dough and shape them into rings.
Bake in the oven at 200 degrees Celcius (392F) for 10 minutes.
Store the ones you don't eat in a tin.
I added 50 grams of chopped of almonds in this years lot, and that just made them so much better.
