Lemon Cake ~ Citronmåne

There's a Danish cake called "Citronmåne" - or lemon half moon - or Kopenhagener Torte. It looks like this:



If you cut off half the bottom layer, and eat the rest, then the cake matches the amount of icing. lol It's full of fat and artificial flavours, so when I really feel like eating a cake like this, I bake my own version.

ZRS (Zaphira's Recipe Service) presents:

Zaph's Lemon Cake

You'll need:

2 eggs
225 gram white sugar
150 ml low fat milk
25 gram oil
1 lemon, the juice and the grated peel of it
180 gram wheat flour
2 teaspoon baking powder


Icing:
100 gram icing sugar
2 tablespoons lemon juice


Whip the eggs with the sugar till it's fluffy and almost white.

Grate the peel of the lemon, and squeeze the juice out of it. Add both peel and juice to the egg mix. Stir.

Add milk and oil, and whip again.

Mix the flour and the baking powder and add it into the dough. Mix it with a spoon.

Pour it into a baking paper foiled baking tin and bake for 40 minutes at 175 degrees Celcius.

When it's done, take it out of the oven and let it cool.

Make the icing: Mix sugar and lemon juice. Pour it over the cake.

This is actually one of my favourite cakes, because it's sweet and fresh at the same time. And I absolutely love lemon icing. :yum yum:

...do we get Blueberry and white chocolate cookies or muffins?? That would be fantastic - even Gordon Ramsay himself would get on bended knees and ask forgiveness.....

Personally, I think that any foodie magazine that wanders in here could do worse than requesting Pussy Cat's permission to feature her ZRS recipes maybe once a month - 'real food from the blogosphere' or something - everything here is good, yummy, totally healthy and deliberately designed to be lo-fat - and is tested in real life, not by a panel of experts or TV cooks. bigsmile

Orange would work for sure. Raspberry and white choc, but then it would change the 'concept' of this cake. bigsmile

Hmmm. I like the original concept, but I think Orange would be delicious. Nice and simple. Raspberry & white choc would, as you say, be a totally different cake. Either Orange or Lemon would satisfy my cake need up
