Pink Buns?

Ever since I baked my beetroot cake I've been intrigued by the fact that it lost the pink colour when it was baked. I mean, how can pink batter turn into white cake? Beetroot is something that colours a lot, so I was really surprised.

So - I tried to experiment with something else. Buns. Pink buns, I hope.

I'm mostly writing the recipe here to be able to bake them again - but please feel free to try it out! up

ZRS presents:
Zaphira's Pink Ham and Cheese Lunch Buns[/COLOR][/SIZE]
(makes 12)

Ingredients:

300 ml luke warm water (10.1 fl. Oz.)
25 gram yeast (0.9 Oz.)
1 small grated beetroot
1 medium sized grated carrot
1 teaspoon salt
1 teaspoon sugar
2 tablespoons oil (olive or rape)
1 large handful of oatmeal
2 large handfuls of rye flour
1 large handful of whole grain wheat flour
Ordinary wheat flour (don't know how much exactly - add a little by little)

Fillings:
12 slices of cheese
12 slices of ham

How to do:

Dissolve the yeast in the luke warm water.


Add grated beetroot and carrot, salt, sugar, oil, oatmeal, rye flour and whole grain wheat flour. Stir well.







Add wheat flour and stir (I use a wooden spoon) until it's firm enough to be poured out onto the table. Add more wheat flour and knead until it's bun-dough-like. smile Not too dry, and not too sticky.



Put in the bowl, cover with a tea towel and let raise for an hour.





Pour it out onto the table again, and cut it into 12 pieces.






Mash each piece flat, put on a piece of cheese and a piece of ham on half the square, and cover it with the other half. Make sure there aren't "holes" that the cheese with get out of when it melts in the oven.



Put the square buns on a baking paper covered baking plate, let raise for 15 minutes, and then bake them at 200C (392F) for 25-30 minutes.



And see: They have also magically lost their pinkish colour! confused


They taste really good - a perfect lunch bite! Enjoy! happy

Cool idea, I love that the filling's baked in!
I don't know why colouring changes in food. I've tried to make blue muffins and they come out green, purple come out brown, red come out brown too. irked

Probably the heat breaks down the chemical that contains the beetroot pigment. Try adding a food colouring bigsmile

Just curious, have you ever tried to apply artificial colouring ("konditorfarge") to buns? It should in theory be tasteless and perfectly safe, and they could potentially keep the colour. Not sure if it's applicable though. smile

There is an explanation for the disappearing pink hue, in a previous post (I think the beetroot cake one) - I'll look it up & report back, with credits where credit is due...

@ FlaRin ~ I'm not so sure that it's the entire explanation. I've sometimes baked slices of beetroot (with other veggies),and I can guarantee you that they're still red when they come out of the oven! left

@ Kimmie ~ I baked blueberry muffins a while ago - and as far as I remember they came out purple. cool

@Pussy Cat ~ yeah, but I think the point might also be that the other ingredients react and work against the pink colour - plus the heat - fascinating - Zucchini doesn't stay green when you make Zucchini cake\bread\muffins, does it?? smile (asking 'cause I don't know...)

Luckily, the ham & cheese don't change colour - that'd be *very* weird lol

@ Angeliki ~ They sell strawberries all year here, imported from warmer countries, but I rarely buy them. They're taken off the plants before they're ripe because of the transportation time. Frozen ones are much much better at this time of year. I'd love a piece of your strawberry cake. :yum: happy

@ Flarin ~ You're right about the zucchini cake (see here - this one is coloured with food colour), but it's different because the batter isn't really green either. smile

Mmmm yum - that sounds pretty good smile And yeah - the colour component wouldn't change that much, you're right lol - would you put extra salt in the bread with the tomato, or would that affect the way it rises?? (I have no idea about baking, so am interested) smile

@ Flarin ~ I wouldn't put extra salt in the bread, not because of the way it rises, but I think it'd taste better with a little bit of salt sprinkled on them instead. up

Well, as you know, I can't bake - but, I can easily make a nicely spiced (or Italian influenced) mince filling, but I can't do the bun. Have to be a collaboration, then smile

@ Flarin ~ ... I must admit that I've never thought of my buns in any of those terms. I think I need time to think over it. smile

@ Aadil ~ I have never heard of bunny chow. I googled it, and the curry looks really yummy, but I would never have thought of stuffing bread with it.

It's usually topped with the hollowed out piece of bread and some carrot salad. But that's basically what it looks like, yes. up.
If you can cook curry in the traditional Indian style, then all you need is a half or quarter loaf of bread. Hollow it out, fill with curry, top off with the hollowed out bread and some carrot salad. up.
