Yes, its good practie, make sure you tie your double fishermans with a proper tail, one guys line popped out.

Oh, definitely, you can never be too safety conscious when it comes to ropes. i hope the guy wasn't too high when his knot slipped

I really like to use my ascenders instead, but will always have at least two prusiks, they live attached to my harness at all times.
