I am glad you posted this. When I was younger we had a neighbor that made a really deep and fluffy cheesecake, no idea how she made it and no one has the recipe. Any ideas what I am talking about?

Many years ago, I found a recipe for chocolate cheesecake that sounded really good. I modified it slightly, using a regular graham cracker crust where it had called for a chocolate crust (the chocolate one made it sound way too rich). Then I baked one, just to see if I could.

Scrumptious.

It's the only kind of pie I know how to make.

I am not too crazy about heavy desserts either and love fruit to lighten them up.

I actually used to LOVE cheesecake. Then my daughter's father got a job at the Olive Garden. He brought that stuff home every single night for over 5 years!

Now I can't stand the sight of it.

Jameson requests a cheesecake for his birthday every year. There is no escaping the stuff!
