Well, some more time has gone by, and I'm still in love with the iPhone.
I decided to take the plunge with iTunes 7.7.1 in the end, having ensured I'd done a Time Machine backup first, and so far all is well, so that's a relief. Also solved my notes problem by using the password safe I'd installed (SplashID), which let me set up a Note type and then enter stuff on the MacBook, then synced across to the phone. It means logging in to enter and view notes, but gives me a searchable and syncable notes database with no extra expense.
Still haven't sorted out a to-do app, but I'm almost fully set up otherwise.
So I'm a happy bunny. The iPhone may not be for everyone, but it's definitely for me!
