how can I change the use a web mail service (under email client section) to include gmail when clicking on an email link?

You can use the Gmail Compose extension: <https://addons.opera.com/en/addons/extensions/details/gmail-compose/>.

Once installed, press ctrl + shift + e to get to the manage extensions page (if it doesn't show up automatically). Then, click the wrench icon next to the extension to see what extra options it has.
