Maintaining multiple versions of Opera on Mac

New instructions for versions newer than 11.5x deprecates the the 11.01 and newer instructions.

Just a heads up for the beta testers. up

I tried once to copy my Opera Next profile to my Opera (Stable) profile, but apparently, Opera Next uses some new format for storing mail, which is incompatible with previous versions. So, how safe is it to share the same profile for multiple versions of Opera, given that the profile format changes ?

It is not safe at all to share a profile between different versions of Opera. For reasons like the one you mention. In general, downgrading to an earlier version is not supported.
