You can goto Mail View Two Lined Messages and set it to 0. You can click the wrench icon (the tilted one on the message toolbar) and configure the layout and other settings etc. You can click the wrench icon (the straight one with the lines next to it) to control the "show" settings and to override the global sorting settings just for that view.
That should generally help. Besides that, you'll need to be more specific about what you don't like.
But, you should give yourself some time to get used to things to give the new look a chance.
