is there an option to globally set the sorting for all mail and news and rss feeds at once, it is a bit tedious to do this each and every one.

In 11.60, yes. In fact, Opera does that by default in 11.60. Just change the global sorting under the wrench icon on the message toolbar and make sure you don't have the an override set for each view under the wrench icon on the message list toolbar.
