Restoring the possibility of editing mail header

I don't know why but there was "Edit" button deleted from customizing mail headers window. Those new headers are now sometimes bigger than message field and it can't be changed.

Who said? Right-click on the mail headers to customise them.

Not possible. Elements can only be enabled\disabled now.

Well, that changes them and reduces the space taken by the headers. How many do you really need?

If you need more vertical space for the message, use the side-by-side list and message display. That's probably the best for most widescreen monitors, which is why its the default now. I am using 1280x1024 so I prefer the list on top layout.

It was dropped a while ago when there was some UI work done. +1 for bringing it back as it had alignment options on it etc.

I am using 1280x800 and opened panels on the left so I prefer "List and Message Below".

I understood your request in the technical aspect (as the byte-counting remark should have made clear), not the ui aspect, which applies to all clients.
