Go to the speed dial you want to replace. Then press the middle select button for about 5 seconds. That will bring up the menu to edit or delete. Pressing "1" also works.

Hmm theres no 1 key on iphone so just touch and hold the icon of website you want to edit or delete..hope it helps
First visit the sites you would change, then in the OperaMini main page long press the ones you don't like , select "Edit" and choose from the list

Iphone is touchscreen.It has no number keys,just one key.
