Preferences (Ctrl F12), Downloads, MIME tpes, and quick find whatever file type you want to change, e.g. "pdf". You may have to uncheck the box that says “Hide file types opened by Opera.”

Sounds to me like the OP is looking for a reference ... there may be such a thing for a few standard types, but there are also rules for adding new types. Opera includes a few Opera-specific MIME types for skins and setup files that wouldn't make much sense in other browsers as an example - I doubt you'll find those listed in most references.
