That option has been moved to opera:config. Search for "tray."

You can change to no tray icon by using the about:config.
Careful, don't change too much!
Type in the address bar: about:config
Press enter.
Scroll down to: User Prefs, Click once at User Prefs.
Scroll down to: Show Tray Icon and remove the mark by a single click on it.
Scroll down again and hit the “record” key.
(Note: I'm using a non English version of Opera, not sure “record” is the exact translation)
Close Opera (completely) and start Opera again. This time without the tray icon.
