There are often times when I don't feeling like making a dinner based on a meat entre. It's possible that I'm losing my taste for meat. Or I also think more about what's involved in getting the meat I see in my grocery store from the animal to the shelf. I wonder if I would eat any meat if I had to go out and hunt it down myself. On the other hand, I'm not sure I'm ready to give up my chicken cutlets or the occasional grilled cheeseburger forever. Most of all I do think a more vegetarian diet has a lot of health benefits worth considering.
With all of the great recipes available on the web and in cookbooks, it's easy to make simple delicious vegetarian dishes. For me the difficult thing is just changing the mindset of a meat-centered meal. It's how I grew up with meat at most dinners and sandwich meats for lunch. So the first step is just trying something new and having fun with new food ideas.
So what can you have in place of meat? An easy thing many people start with is tofu. As long as you're not allergic to soy, tofu is a tasty and versatile alternative to meat. You'll find great recipes for everything from grilled sandwiches to stuffed ravioli, desserts, and more.
You can also make great meals using eggplant. This is a natural and fresh food that's quite delicious. You can serve it plain or make a layered casserole. You can make a simple casserole of baked eggplant by slicing up an eggplant or two, breading the slices and briefly frying them in a pan. Then place a layer of sauce at the bottom of your casserole dish, followed with a layer of eggplant and cheese, and continue layering with a final layer of cheese on top.
While we're on the subject of lasagna, pasta always makes a great vegetarian meal. You can make meat-less lasagna for example. Or you can make a simple pasta dish topped with any of your favorite red or white sauces and serve it with a fresh green salad and a glass of wine for a complete and wonderful meal.
Of course let's not forget pizza. This all-time favorite can be prepared any number of ways and will surely please everyone in your family. You can top half the pie with pineapple and fresh cubed pepper pieces for the vegetarian and the other side with extra cheese and pepperoni for the person who still loves meat in their meals.
The list of ways you can add vegetarian meals into your life is limitless. And there's no pressure to try and go vegetarian all at once. The fun part is trying it here and there and experimenting with the new foods. The more you do it, the easier it will get and very possibly, the healthier you'll be.
