Marzipan Muffins

The other day Zaphira posted a delicious looking recipe she created for Marzipan Muffins. Never having used marzipan (I've used almond paste, which is similar), I decided this was the perfect recipe to try. :yes: There were a couple things that I should have taken into account though- 1.) The marzipan I found was hard as a rock. I had to put it in the microwave in order to soften it enough to grate, and 2.)Nebraska is at a much higher elevation than Denmark. I needed to use a bit more flour to compensate. :lol: My muffins are nowhere near as pretty as Zaphira's, but they are still quite tasty. :D I'll just have to tweak the recipe a tad bit to adjust it to my elevation, but I'll definitely do it again. :yes: Thanks for the recipe, Zaphira. It's incredible! :D


Sorry about the quality of the pictures. The light in the kitchen is terrible. :frown:

Hi, Sarah! It's interesting stuff to use, that's for sure.

I'm at about 3600 ft., so I need just a bit more flour, even for boxed stuff. I'll have to see just how much more I need to add to get this recipe to work right for where I'm at. :smile:

I went to the S/market earlier today ,
and I saw all the isles with Halloween decorations and candy! :eyes:
it is still September and they are all over the place!
everything starts too early!!!

I just remembered to mention it after seeing the orange color here,
which matches the Avatar as well!

I'm sure you could use it for that, but I honestly haven't a clue. All I know is that the stuff is basically almond paste with more sugar.

It hasn't changed much. :left: I've been doing other things lately, so unpacking has been neglected. I did get my used washer hooked up today and the dryer should be hooked up this evening. :yes: I'm testing out the washer right now, so we'll see how it goes. :D

I just went to the craft fair and farmer's market. I love seeing all the different things they have though. :D

There is one every year at the church not far from Mugs' place.

Basically senior ladies selling their crafts to support the Christmas dinner for the homeless.

There's some really neat stuff for the Oktoberfest one, only because Oktoberfest is such a big deal around here. :lol: I avoid the "Beer Tent" since there's way too many people in there and there's usually a lot of alcohol being served in there. It's not too bad during the day, but the later it gets, the more belligerent some folks get. :rolleyes:

They do have the live entertainment in there too, so it's not all beer fest, but that's a bit of a downside.

I'm only slightly higher than a village. I think they consider it a city, although that might be generous considering there's only about 900 people here. :lol:

Lol, There are 200 people here.
The school my kids attend currently has 40 students.

Sounds like on of the towns nearby. They only have 300 people and their school consolidated with ours. I'm not sure how many students are in the school though, but I think more than that. :lol:

Ya, it's tiny here. My daughter Danika is the only student in her grade and always has been.

Poor kid! That could be a little rough, I think. I'm guessing that she has friends in the grades above and below her though, right?
