This is probably the best pork chop marinade recipe ever! I got this from one of the cooks at the guest ranch I worked at. 
Soy and Garlic Pork Chop Marinade
2/3 c. soy sauce
1/3 c. water
1-1/2 tsp. chopped garlic
1/3 c. brown sugar
1/4 c. rice wine vinegar
Mix all ingredients together and marinade pork chops at least 2 hours.
The recipe makes enough for 6 1-1/2 inch thick pork chops.
