Spring Time

With the arrival of spring, that means dredging out my tried and true recipes that I usually enjoy during the spring and summer. :smile: Because I was too lazy to actually cook anything tonight, I made Kidney Bean Dip and I'm marinading my shish kabob meat for tomorrow night. :smile:

Here's a picture of the bean dip (I know, it looks like bean dip. :lol: ) :

I love the tangy bite it has though. It's a simple, but slightly refreshing appetizer (or meal in my case). It's also super easy to make too.

Kidney Bean Dip

1 (15 oz.) can kidney beans, drained and rinsed
1/4 tsp. ground cumin
1 Tbsp. chopped onion
1 tsp chili powder
1 Tbsp white wine vinegar


Combine all ingredients in a food processor until smooth. DO NOT USE A BLENDER! Use a fork or potato masher if you don't have a food processor. As for why you don't want to use a blender, it's a very thick dip and not only will it not blend right in there, but you'll have a heck of a time getting it out of the blender. I just use a potato masher since that's easier for me. :smile:

Bear was bugging me the entire time just for the freaking chips, although I bet he'd try the bean dip too if I let him. :lol:

The Experiment

I absolutely love Betty Crocker Warm Delights, but I'm not too fond of paying the price for them other than as the occasional treat once in a great while or when they're on sale. Then I saw this on the ShallowMuse's page. That got me to thinking about whether I could find some other recipes online for this. To be honest, I'm not much of a chocolate cake fan except for the Molten Caramel Warm Delights or a special made from scratch recipe that I have. Could I find another recipe for another flavor? After about an hour or two, I finally did. :yes: I honestly can't recall what the link for it was, but that's the beauty of copy/paste (or in this case Evernote :sst: I've been meaning to do this post for about a week, but I wanted to try it first.

How to Make a Single Serving Cake

Mix together in a small (cereal size) bowl:
1/2 cup Betty Crocker cake mix (120mL or about 35 to 40 g)
1/3 cup water (80mL)
Microwave approximately 90 sec (1 min. 1/2)
Add any toppings

Tips
Use Betty Crocker cake mixes or the Krusteaz mix as suggested in the recipe. These mixes provide better volume and texture for microwave cooking.

All recipes can be made in cereal size bowls. Plastic, paper, and foam bowls are great for easy clean-up. The 20-ounce size works best.

Microwave cooking times can vary. Adjust time 5 or 10 seconds if necessary.


Since all I had was the Betty Crocker Chocolate cake mix (hey, it makes awesome cookies), I used that and drizzled some caramel ice cream syrup on it. Absolutely divine! I'm going to cut the recipe in half the next time, since that was a bit more than I needed for a night time (well, anytime) snack . :lol: It actually had a really good flavor and texture. I was worried that the texture would be yucky, but it was the same as the Warm Delights. :D Now I'm able to eat whichever flavor suits my whim! I think that Cinnamon Struesel or something similar will be my next one after I finish off this box of mix. :D Bon appétit! :chef:

*I think I converted the metric amount on the dry ingredients correctly, but I might not have. Here's to hoping that I did! :D

Cream Cheese Cookies

Because these things are too tasty to keep to myself, I'm actually going to share the recipe. :smile: You can see some pictures of the cookies themselves here. It's such a simple cookie to make that almost anyone can make them. :D

Cream Cheese Cookies

Makes approximately 3.5 dozen cookies

1/4 cup (57g) of butter (1/2 of a stick), softened
1- 8 ounce (225g) package cream cheese, softened (the softer the better)
1 egg
1 teaspoon (5mL) almond extract*
1 (18.25 ounces or 517g) box of white or yellow cake mix
sugar to dip the cookies in

Preheat over to 350 (150 C) degrees F.

Mix cream cheese and butter in a medium size mixing bowl until smooth.

Add the egg and almond extract and mix until smooth.

Add the cake mix and stir until mixed.

Form small walnut-sized balls and roll in sugar to coat and place on an ungreased cookie sheet. I recommend flattening them a little bit with the bottom of a mug after placing them on the cookie sheet so that they cook all the way through, yet don't brown.

Bake for 8 to 10 minutes. They will be a little soft, so let them rest on the cookie sheet for a few minutes after taking them out of the stove. Let them cool completely before placing them in a container.


* If you're allergic to almonds, don't like almonds, or can't have alcohol you can use non-alcoholic extracts, vanilla extract, or ground vanilla bean in place of the almond extract. If using vanilla bean, just cut it into smaller pieces and run it through a coffee grinder or food processor (not a blender) until ground really fine. Use 1/2 teaspoon of the ground vanilla bean and add 1 teaspoon of water.

Litter Box Cake

Ingredients

2 boxes white cake mix
(You will need 4 egg whites for the cakes)

1 large package white (vanilla) sandwich cookies

1 large package vanilla instant pudding

Blue food coloring paste (cake decorating department)

Black food coloring paste (cake decorating department)

12 small Tootsie Rolls or equivalent


Serving Dishes and Utensils

1 NEW cat-litter box

1 NEW pooper scooper

Instructions:

1. Prepare cakes. Add some black food coloring to the batter to make it gray colored. Bake cakes according to directions. You can bake it in any size pan in the oven or even in the microwave. Let cool.

2. Prepare and chill pudding. (you can put the pudding and milk in a container with a tight fitting lid and just shake it instead of using the mixer)

3. Place cookies in a ziplock bag and crush them with a rolling pin or large can.

4. Put a small amount of blue food coloring paste in a bowl and add several drops of water. Stir well.

5. Add 1 cup of cookie crumbles to the food coloring and stir. (Experiment with the color. Add more food coloring and water if needed to get desired coloring) Set aside.

6. When cakes are room temperature, crumble them into the cat-litter box.

7. Place 3 cups of cake crumbs into a large bowl and the remaining cookies crumbs and combine.

8. Add pudding and stir. Mixture will clump together looking like urine clumps. (Experiment with the amounts of pudding and cake/cookie mixture. You want it to stick together but not be too moist.)

9. Strategically place “clumps” of pudding/cake/cookie mixture on top of the “dry” litter. These clumps are like servings. Everyone gets a clump with some extra litter in their serving!

10. Unwrap Tootsie rolls and heat in microwave 12 seconds (one at a time) until soft and pliable.

11. Shape the blunt ends into slightly curved points. Make some into small oval shapes and stick them together end to end. Melt a few completely and scrape off into the cat-litter box. Repeat with all of the tootsie rolls.

12. Place the candy “decoratively” in the box and drape a few over the sides!

13. Sprinkle the remaining blue cookie crumbs over the top, partically burying the tootsie rolls.

14. Place box on a sheet of newspaper and serve with scooper. Enjoy the laughter and treat!

Dual Birthday Post

OK, I have a bit before my birthday, but I'm going to post this now because I want to include Karen's birthday as well.

I made cupcakes tonight because after talking about them earlier, they sounded really, really good.

I'm sorry about the quality of the pictures, all my lights are those dang spiral bulbs and they are a pain!

Here they are pre-frosting. Yummy chocolate cupcakes.

My cupcake. I was goofing around a bit. It's been ages since I last decorated anything, so I figured it'd be fun to see just how rusty I was. I should've stuck the frosting in the freezer for a bit to give it a chance to re-solidify again. In this heat, buttercream frosting doesn't hold up so well.
