Food - Ayam Merah Lengkuas

I modified a bit :smile:

Blended ingredients:
1. 8 shallots
2. 8 garlics
3. 5 cm ginger
4. 5 cm lengkuas ( gallanger? )
5. 3 onions
6. 100 g chilies

Sautee ingredients:
1. 3 staranise
2. 5 clovers
3. 3 cinnamon sticks

Others:
1. 500 g chicken
2. 500 ml coconut milk
3. 5 lemon grass ( bruised )
4. 4 tblspn tomato sauce
5. 2 tblspn chilie sauce
6. salt

Method:
1. Sautee ( the sautee ingredients obviously :D ) for a while
2. Pour in the blended ingredients and cook for 15 minutes
3. Add in coconut milk, chicken, lemon grass, salt, tomato and chilie sauce
4. Stir and leave to cook

I made it to eat with Nasi Lobak Merah ( Rice Carrot )

Blended ingredients:
1. 5 cm ginger
2. 1 onions ( big one )
3. 6 garlics
* blend everything with some water to make a paste out of them

Sautee ingredients:
1. 6 shallots ( thinly sliced )
2. 3 staranise
3. 2 cinnamon sticks
4. 8 clovers
5. 125 g of ghee ( can use butter )


Other ingredients:
1. 500 g of basmathi rice ( can use normal rice if can't find any )
2. 500 ml of canned milk ( not condensed )
3. 3 pandan leaves ( just for the smell, skip it coz it's difficult )
4. salt
5. 200 g grated carrots

Method:
1. Heat pan and put in the ghee/butter till it's all melted ( use slow heat )
2. Add in sliced onions and sautee them till they look kinda crispy
3. Add in clovers, cinnamon sticks and starnise, sautee for a few seconds
4. Add in the blended paste and sautee for about 3 minutes
5. Turn off heat and leave it
6. Take a pot, add in the rice, wash and drain
7. Pour in the ingredients that you just cooked into the pot
8. Add in milk, salt and stir well
9. Cook ( with no cover ) with slow heat untill all water is absorbed ( stir once in a while, while cooking )
10. Add in grated carrots, mix well
11. Slow with extremely slow heat ( as if the heat would die/turn off ) untill rice is cooked
 

Food - Bread Pudding

... an express way to make it! I got this recipe from RASA magazine, June 2008.

Bahan2:
1. 500 ml fresh milk
2. 6 tblspn sugar ( reduce it if don't want it too sweet )
3. 1 teaspn vanilla essence
4. 1 egg
5. 5 pieces of bread ( cut into 6 each )

Cara2:
1. Mix all together ( except the bread ) and stir well
2. Pour on top of bread and leave it for 20 minutes
3. Bake at 150 celcius till cooked

I got this recipe from a local magazine, RASA. This edition is on Indonesian food. It's a simple one and :up: too. Me and sisters love it!

Bahan2:
600 gram chicken fillet + beef
4 tblspn of sweet soy sauce
2 tblspn of light soy sauce
3 tblspn of ghee/butter
salt

Cara2:
1. Mix all together and marinate
2. Grill

Simple, right?

From Kayoko..

..In a cooking pan, add small quantity of dashi stock (85 cc per person), soy sauce (15 cc per person) (use Japanese brand one - like Kikkoman - if you can), and 1-2 tea spoons of sugar (Japanese would use sweet wine called Mirin, but apart from it is difficult for you to find, it is not halal).

Slice thinly half a small onion per person. Dice chicken (Japanese like chicken thigh), about 40-50g per person.

Add onion to the pan with stock, and bring to boil, then leave it for 1 min.

Then add diced chicken, bring to boil and cook 1 min stiring sometimes.

Crack 2 eggs per person and mix with folk stiring 3 or 4 times (you should not mix the white and yellow too much), and pour the eggs and chopped leek or spring onion (they can be added after the cooking, but I personally don't like them completely raw) in the pan, and stir with chop sticks (or something similar) only once (dashi stock and eggs should not be mixed completeley). Cover with a lid, and when the eggs are half-set (Japanese love half raw egg, but if you don't cook it thoroughly).

Pour it onto white steamed rice in bowl or on plate.

You may start eating now.

My mother's recipe, a very simple one.

Simply saute blended chilies and onions. Pour in coconut milk, add in some tumeric powder and some salt. Add in the lala ( clams ) and cook for 10 minutes ( more or less )

Food - Murtabak Maggie

quick and simple.

bahan2:
1. some garlics ( chopped )
2. 1/2 onion ( chopped/sliced )
3. some chillies ( chopped )
4. 1-2 eggs
5. 1 packet of Maggie Curry

cara2:
1. boil water and put in the maggie only ( dont break it ), let it cook for some minutes and then drain the water
2. in a bowl, put everything else including the curry seasoning powder and mix well
3. pour in the maggie into the bowl and mix
4. using slow heat, put just bit of oil and pour in the mixture
5. spread it out and let it cook for few minutes
6. flip it over and let the other side cook for few minutes
7. turn heat off and serve
 

Food - Sauteed Black Mushroom

i got this recipe from a cooking magazine, SAJI, special edition, july 2007. this recipe is not spicy at all. maybe next time cooking it, i will add in some chillies.

bahan2:
1. 10 dried black mushroom ( boiled till soften )
2. 1 onion ( cubed )
3. 3 garlics ( chopped )
4. 1 tblspn thick soy sauce
5. 2 tblspn light soy sauce
6. 1/2 tblspn sesame oil
7. 1-2 tblspn oyster sauce
8. 1 tblspn corn flour ( mix with some water )

cara2:
1. saute onion, garlics and ginger
2. add in all the sauce and stir, add in 1/2 cup of water
3. add in mushrooms and stir for 3-4 minutes
4. add in corn flour mixture ( 1 spoon at a time to see the thickness of the gravy )
5. stir for few more seconds, turn the heat off and serve

i got this from a recipe magazine, SAJI special edition, july 2007 and i modified it, putting more ingredients to it.

bahan2:
1. 4 slices of bread
2. 2 slices of cheese
3. some prawns
4. 1 potato ( cubed )
5. some chillies ( sliced )
6. 1 onion ( cubed )
7. 4 garlics ( chopped )
8. some parsley ( chopped )
9. some chicken seasoning powder
10. 1 egg
11. 1/2 bowl of fresh milk

cara2:
1. saute onions, garlics, chillies, prawns, potatos and parsley.
2. add in some chicken seasoning powder
3. when everythings cooked, turn off the heat and pour into a bowl.
4. add in the egg into the milk and mix well
5. dip 1 bread into the mixture and put on an aluminium foil
6. spread the fillings ( prawns and etc mixture ) on the bread
7. put 1 slice of cheese
8. dip another slice of bread in milk and put on top of it
9. spread the fillings on the bread
10. dip another slice of bread in milk and put on top of it
11. spread the fillings on the bread again
12. put 1 slice of cheese
13. dip the last bread in milk and put on top
14. bake at 210 celcius for 15-20 minutes

i got this recipe from a cooking magazine, SAJI special edition, july 2007. its a recipe of cuttlefish actually, but since i just have prawns.. so prawns it is. :smile:

its simple and i like it, though its not as spicy.

bahan2:
1. 1/2 bowl of prawns
2. some dried chillies ( cut )
3. 4 cm ginger ( sliced )
4. 1 onions ( cubed )
5. 3 garlics ( chopped )
6. some parsley ( chopped )

bahan2 B:
1. 1/2 tblspn of thick soy sauce
2. 1/2 tblspn of light soy sauce
3. 1 tblspn of chillie sauce
4. 1/2 tblspn of oyster sauce
5. 1/2 tea spoon of hiong kong flour - mix with some water ( i dont have it, so i used corn flour )

cara2:
1. sautee onions, garlics and dried chillies
2. pour in bahan2 B ( except for corn flour ), add in bit of water and stir
3. add in prawns, stir and let them cook
4. pour in the corn flour mixture and parsley, stir for a few seconds, turn off the heat and serve

Food - Pilau Rice

bahan2:
1) 2 cups or basmathi rice ( washed and drained - can use normal rice also )
2) 1/2 cup of meat ( sliced )
3) 1/2 cup of prawns
4) 2 potatos ( cut into 6 each )
5) 3 tblspoon of cummin powder
6) 1 cinnamon
7) salt to taste
8) 1 onion ( finely diced )
9) 10 garlics ( finely diced )
10) 2 tomatos ( finely diced )

cara2:
1) simmer meat and potatos with 3 cups of water until potatos are half cooked
2) while waiting for that, sautee diced onions,tomatos and garlics with cinnamon
3) add in cummin powder, stir and let all cook for 5 minutes
4) turn off the heat, and pour everything into a pot
5) pour in drained basmathi rice
6) pour in meat and potatos along with the water
7) add in bit of salt, and let the rice cook
8) stir once in a while, add in prawns 5 minutes before rice is fully cooked

thats it! she said pilau rice is eaten with salad. im not into salad, so i made mixed veges :smile:.
