Pakoras

Pakoras.
.Pakoras. Pakoras are an Indian snack famous the world over and comes in a variety of flavours and shapes. I will try to present the most simple way to make this snack . Base indgredients: 1. Gram flour or 'besan' as it will be called in this recipe. 2. Cooking oil or medium. 3. A pinch of red chilli powder to a 100 gms of besan . 4. A pinch of powdered cummin seed to 100 gms of besan . 5. 1\4 teaspoon of baking powder or soda. 6. Fresh chopped coriander leaves. After adding the spice to the besan, add the baking soda and salt to taste. It will be best to use 250 gms of besan to start with. Mix the besan flour well before adding water to make a thick batter.The mixture must have a medium consistency and not be lumpy or too thin. It is best mixed using an egg beater so that it is smooth and light. Heat enough oil in a deep pan so the pakoras can be deep fried. Now using a table spoon scoop up a spoonfull of batter and drop it into the pan in one piece, keep dropping a spoon full of the batter in the pan till there are 4 or 5 pakoras being fried at the same time. When the pakoras are fried to a deep brown colour, use a sieve to remove them from the hot oil, allowing the oil to drip back into the pan without burning the pakoras. When all the pakoras are fried put them in a plate. Garnish with fresh coriander and serve with tomato ketchup or mustard sauce if preffered. There are a lot of different variations of pakoras.Such as adding chopped spring onions. Small cubes of eggplant, or cheese to the batter . This dish is very popular as an appetizer , mid meal snack or with a cup of tea at teatime. This recipe is dedicated to my dear friend and Operaite. Tiny. Please try it out.
