Nosotros los mexicanos comemos mucho guacamole, lo usamos con todo, siempre lo tenemos listo. Acà en Mèxico se cultivan unos de los mejores aguacates a nivel mundial. Quiero compartir con ustedes la RECETA ORIGINAL de un buen guacamole. No hay necesidad de usar una licuadora, ya que es uno de los platillos mas fàciles de hacer. Con un recipiente hondo, un tenedor, y una buena cuchara de palo, no necesitamos mas. El guacamole es bàsico para los tacos, o para comerlo como botana con tostaditas.
INGREDIENTES:
2 aguacates de buen tamañano sin càscara, guardar por lo menos un hueso.
1 cucharadita de jugo de limòn.
1 jitomate o tomate rojo sin càscara de buen tamaño o 2 medianos partido en cuadritos.
2 cucharaditas de cebolla picada finamente ya desflemada.
1 cucharadita de cilantro bien picado y perfectamente lavado y desinfectado.
Sal al gusto.
Un poco de leche.
En un recipiente hondo poner los aguacates y triturarlos con un tenedor hasta obtener consistencia suave. Añadir un poco de leche y acremar con la cuchara de palo. Añadir los demàs ingredientes, uno a uno. Sin olvidar mezclar con la cuchara mencionada. El hueso reservado se pone hasta el final dentro del guacamole, para que este no se ponga negro. Se puede refrigerar un rato o comerse de inmediato. Servir como acompañante de tacos, carnes, arroz o comer como botana con tostaditas. DELICIOSO.
En Mèxico, aun se preparan unos guacamoles exquisitos, cuando son preparadas en MOLCAJETE, un antiquisimo utensilio prehispànico, usado desde los aztecas, para preparar alimentos. Este utensilio esta hecho de piedra, sirve para hacer salsas, guacamoles, etc. Una especie de licuadora prehispànica, pero que da un toque de sabor màgico a los platillos. Los molcajetes aùn se pueden comprar en los mercados mexicanos.

Este es un guacamole preparado en un MOLCAJETE.

We, mexicans, eat a lot of guacamole. It is a very easy dish to prepare. You dont need a blender, or a mixer, no...You only need a cacerole where you are going to prepare it, a fork, a wooden spoon and of course the ingredients. Here in Mexico we have one of the best avocados of the world, that is why our guacamole is great. But you, where ever you are, can do it. You need few ingredients...and you can taste it with tacos, or meat or only with tortilla chips.
In ancient times, since the aztecs, they had a stone utensil called MOLCAJETE, made just with stone. We still use it. It gaves to our food a very magic touch....Ok, here is the recipe, but remember, NO BLENDER.
INGREDIENTS:
2 lg. ripe avocados
1 tbsp. (each) lime (or lemon) juice,
1 med. tomato, skinned and finely chopped
2 tbsp. onion, minced
1/2 tsp. (each) ground coriander, salt
2-3 chopped huachinango chiles
Milk
Peel avocados, removing pits (reserve 1 pit); mash pulp with fork, add milk and smooth it. Add lime juice, tomato, onion, coriander and salt. Add the huachinango chiles and mix well with the wooden spoon. Place pit on top of guacamole dip and refrigerate (keeps dip from darkening). Remove pit when ready to serve.

Tenía entendido que el chiste del limon era que no se pusiera negro (o sea, como un sustituto del hueso).
Y la verdad, el guacamole queda bien en todo ^_^

You dont need to put coriander or cilantro if you dont want. It is ok...hope you can make it as it must be, just the mexican style. You are going to love it.
( And dont change your writing style....I think you are the only Myopera users that have that sense or humor, and it is a blessing...).

Mi dulce Katinka, gracias por estar. Entonces no te gusta el guacamole ? Bueno, te entiendo, yo tengo a mi hermana, la mayor que no puede ver el aguacate pero ni en pintura. Obvio que no soporta el guacamole.
Tienes razòn, mucha gente no le quita la càscara al jitomate, creo que es mejor asi, sin quitarsela, tal vez hasta llegue a saber mas rico.
Y si, hay mucha gente que usa su batidora mas que nada, o a veces su licuadora, para mezclar muy bien todos los ingredientes del guacamole y hacerlo asi. Pero ahora ya saben algunos, que no hay mejor manera de hacerlo, que a mano. Y si pueden comprar un molcajete, pues mejor.

No es costumbre usarlo en las comidas, así que generalmente los frutos caen maduros al piso, sin que nadie los aproveche. Y en las fruterias, luego, sale bastante carito...

the thing is that you must use LEMON on the guacamole, it is
helpful just for the color, and yes, maybe a little bit on the
flavor. Try it.

I hate to tell you that Australia has won the international best avocados award 3 years in role and brazil has won it few times. So what Avocado varieties do you think make the best Guacamole. I know this has been debated for long time and love hear your 2 cents. For me when it come to Guacamole I have made it not way you said but i try it, but i have some very fab Guacamole varieties and think best i had chli seeds in it. Any way I not trying be brat to ya but for me Guacamole can be made any way and find it amusing you showing glenn how do it the Mexican way, witch is cool, but have you ever had warm Guacamole on venison if not you should really try its great
