Crème Caramel

After tasting my crème caramel, my flatmate's partner asked "Will you marry me?" yes no
I wish that I had said yes but actually I didn't say no. Just answered "Definitely... but in another life" rolleyes

The way that he and my flatmates fell in love with my food was an inspiration to me to stand hours in the kitchen no matter how sad I was after saying goodbye with my crush. Thought I was crying all day on my bed listening to Jar of Hearts or Turning Tables?! No way! I was busy with my Flan cake singing aloud Nat King Cole's. I loved the moments when I suddenly found something new among my old things. Some hobbies that I might forget for a while. Something that could keep me busy...

There are hundreds of recipes on google but I found the one below the best. So here comes

Crème Caramel
(adapted from savourydays.com)

Flan part
3 eggs
2 egg yolks
70 gram of sugar
400ml of fresh milk
150ml of whipping cream
1 TSP (5ml) of vanilla extract
Salt (just a bit)

Caramel part
70 gram of sugar
Water
1 TSP of lime juice (fresh)

Method
Caramel
1. Put sugar into a saucepan. Pour a little water over sugar and shake the mix gently.
2. Boil this mix over medium heat until sugar completely dissolves. No stir, just shake the mix occasionally. Increase heat to high. When sugar turns into golden, remove from heat.
3. Pour lime juice into the mix and shake a bit, then put into deep dishes.
Note:
You can use porcelain or ceramic dishes to contain creme caramel. I use one glass pot which can stand high heat.

It may take you more than 10min to boil the mix but the result is gonna be great. The caramel's color is awesome love

Flan
1. Combine 3 eggs + 2 yolks and sugar in a big bowl. Whisk.
2. Combine fresh milk and whipping cream in a pot over medium heat. Gently stir until the mix is warm or you see a few small bubbles forming at the edge of the pot. Don’t let it boil. Just to make it warm.
3. Slowly pour this mix into the egg bowl, stir evenly.
4. Use a filter to filter out bubbles. Put salt and vanilla extract. Stir and divide between flan dishes.

Steam
1. Place flan dishes into a steam pot and steam in 45-55 min.
2. In every 10-15min, wipe the steam on the lid so that water cannot fall into flan dishes.
3. Put a toothpick inside the flan to check if the flan is cooked. If the toothpick is clear, the flan is well done.
4. After the flan cools down, put it in the fridge in few hours.
5. Run a thin knife around the edge of the dishes and turn out onto plates.
Note: You can use a cloth to cover the flan dishes before placing the lid above the steam pot. The cloth will prevent water from falling into your flan. This helps to keep the flan surface soft and smooth, otherwise it will look like a nest of bees cry
