One Pot Potatoe Soup

,

Ann's One-Pot Potato Soup

If you're still easing back into the kitchen after last week's food fest, this warm and delicious soup is simple enough to cushion the blow. The recipe calls for chicken broth, but feel free to use turkey stock if you have it. Herbed croutons make a crunchy and flavorful garnish.

Servings: 4

Ingredients:
4 peeled potatoes
1 small onion
4 green onions
1 garlic clove
3 tablespoons butter
3 cups chicken broth
3/4 cup whipping cream
1 cup milk
Salt to taste
Dash white pepper

Directions:

Chop the potatoes, onions and green onions. Finely chop the garlic clove.

In a heavy skillet, lightly saute the onions and garlic. Add the potatoes and chicken broth. Simmer until the potatoes are tender.

Mash the potatoes, onions and garlic with a potato masher. Add the cream, milk, salt and pepper and heat through.

Be Sure to Snack

It's official: Snacking is good -- at least, according to the Mayo Clinic, one of the country's top medical facilities. In an article on their Website, the clinic explains the pluses of indulging in mini-meals, including binge and portion control and the absorption of extra energy and nutrients. Of course, they also stress the importance of choosing healthy snacks; suggestions include low-fat whole-grain crackers, pretzels and crisp breads for extra energy; fruits and veggies to help feel full without empty calories; small quantities of nuts and seeds for protein and to keep you feeling full longer; and low-fat, low-sugar dairy products for their vitamins and protein. The site also has a few healthy recipes and links to more in-depth articles. Get more info.

Health: The Dangers of Genetically Modified Foods

, , , ...

I've been meaning to do this post for a while, and now I'm finally getting around to it. Some months ago I saw a screening of a powerful film called The Future of Food. The film was made by Deborah Koons Garcia, widow of Greatful Dead singer, Jerry Garcia. Take a look at the trailer for the movie.

Did you know that 75% of all processed food in America contains ingredients from genetically modified organisms (GMOs), aka genetically engineered (GE), aka Frankenfoods? Many of the groceries that you buy in the supermarkets have Frankenfoods in them. Millions of Americans don't know because these foods are never labeled as containing GMOs! In many foreign countries, foods containing GMOs are labeled! Why are they not labeled in America? You can read more here. See the Good Morning America news video about it here.Earlier this summer, GMO rice (that had not been approved for human consumption) made it into the human food supply. You can read more about that here too. A federal court in Hawaii ruled that the government had acted illegally in allowing field trials of GE crops.

Frankenfoods have never been proven safe for human or animal consumption! No longterm studies have yet been done. There is evidence of GMOs causing disease in lab tests. Here's more evidence of the hazards to human health in consuming Frankenfoods. Studies have shown increased risks of birth defects from Frankenfoods. Read more about the Myths and Realities of Genetically Engineered foods. Read more about The Biotech Industry. Here's a 5-min. preview of the dangers of GMOs, from a DVD called, Hidden Dangers in Kids’ Meals: Genetically Engineered Foods. It is part of the GMO Trilogy. Listen to a lecture called, You're Eating WHAT?, by Jeffrey Smith. Mr. Smith is the author of a book called, Seeds of Deception. He has also posted information about the Dangers of Genetically Engineered Foods on his website.

Many Americans are concerned about GMOs. Most, that have been polled about this subject, want foods containing GMOs to be labeled. Read more about that here. The biotech industry has been fighting the labeling of foods containing GMO ingredients for years. If this stuff is safe then why are they fighting the labeling for? I beleive they have much to hide, so that is why they don't want foods to be labeled. There are 2 bills concerning GMOs, that were introduced by Congressman Dennis Kucinich. I would love to see them become law and urge you to contact your Congressman to support them.

Now it is time to come back to the powerful The Future of Food movie. You may be able to purchase DVDs of the film at Whole Foods Markets nationwide, or you can buy DVDs online, if you choose to do so. I encourage you to watch the film with an open mind. Without further ado, I give you:
