One Pot Potatoe Soup

Ann's One-Pot Potato Soup
If you're still easing back into the kitchen after last week's food fest, this warm and delicious soup is simple enough to cushion the blow. The recipe calls for chicken broth, but feel free to use turkey stock if you have it. Herbed croutons make a crunchy and flavorful garnish.
Servings: 4
Ingredients:
4 peeled potatoes
1 small onion
4 green onions
1 garlic clove
3 tablespoons butter
3 cups chicken broth
3/4 cup whipping cream
1 cup milk
Salt to taste
Dash white pepper
Directions:
Chop the potatoes, onions and green onions. Finely chop the garlic clove.
In a heavy skillet, lightly saute the onions and garlic. Add the potatoes and chicken broth. Simmer until the potatoes are tender.
Mash the potatoes, onions and garlic with a potato masher. Add the cream, milk, salt and pepper and heat through.
