Waffles

,

I can't help it, I love waffles. They make pancakes seem like a hillbilly cousin (you know - he's amusing, but you wouldn't invite him for breakfast).

I'm going to make them in the morning, and I thought I'd share my basic recipe. I may go with just this, though I often add apple and cinnamon, cinnamon and raisins, or banana. Sometimes I substitute some OJ for milk, and add orange zest and chocolate chips...

  • 1 cup Flour
  • 1 cup milk
  • 1 1/2 tsp. baking powder
  • 2 tbs oil
  • 1 egg, separated
Mix the flour and baking powder. Add the milk, oil and egg yolk. Mix until a batter forms. Lumps are ok. Whip the egg white to soft peaks and fold into the batter. Spoon into a HOT waffle iron, and cook to the desired color/crustiness. I like them crisp, so I cook them until they are golden brown.

If you intend to add something else - blueberries or something - do it before you fold in the egg white. Beating the white is what makes these waffles light and airy, and it also helps them become crispy. You can add the egg at once without beating if you like a heavier waffle, or if you don't like your waffls crispy.

Top with syrup, fruit and whipped cream, or some other favorite. Just don't tell me if you put peanut butter and syrup on them. I love both, but mising them seems sacrilegious.

If you must have your hillbilly cousin for breakfast, the same batter can be used for pancakes - don't bother beating the egg white, and you may want to add milk to make a thinner batter.

Yumm. I would pick waffles over their hillbilly cousin too. Pancakes settle too heavily in my stomach. I feel like I have a pound of batter sloshing around in me all day. I'll have to try separating my egg. I've never done that before.

That's exactly how I feel about pancakes. Some people really like them, though. No accounting for taste!

Pancakes and waffles are okay with me!

Rhona Kirsten 28. January 2008, 10:40

I don't like pancakes either

Matthew 28. January 2008, 13:03

JDeppette 29. January 2008, 01:22

Now I'm starving!!

Matthew 29. January 2008, 02:13

Sounds like it's time for breakfast!

Eliane a/k/a Elly 29. January 2008, 02:52

Pancakes and waffles can be eaten at any time! Yummy!

Topped with whipped cream and fruit! Syrup on the side.

Heavenly

Matthew 29. January 2008, 03:17

When you have waffles, anytime is breakfast time! Yea!

Eliane a/k/a Elly 29. January 2008, 03:19

Hungry! I'll just have some waffles with cinnamon and apples, raisins and maybe some real Maple syrup on the side, if you please.

Oh, and a glass of REALLY cold milk, if that's not too much trouble.

I've never tried your recipe and I am almost afraid to. Sounds addictive!

But it also sounds like heaven. mmmmmmmm

Rhona Kirsten 29. January 2008, 12:44

Now i'm hungry too :right:

Matthew 29. January 2008, 12:46

Heh. My work here is done! Breakfast is the most important meal of the day, you know!

Rhona Kirsten 29. January 2008, 12:53

Apparently :right: I never eat them for breakfast :D

Hi Matthew

Matthew 29. January 2008, 12:56

Hahah.

Hi Rhona  There is no time like now for a midnight breakfast!

Rhona Kirsten 29. January 2008, 13:04

Exactly! :D

Matthew 29. January 2008, 13:09

Bon appetit!

I don't have a waffle maker

ღೋSarahೋღ 3. February 2008, 15:57

(I forgot about the frozen kind)

Matthew 3. February 2008, 16:06

Spend the $25. It's the second best kitchen gadget you can own (after the George Foreman grill  )

Rhona Kirsten 4. February 2008, 12:31

We don't get frozen waffles, u can hardly ever find machines. They're not a big thing here. Stupid Australians  :D

Matthew 4. February 2008, 12:43

Austrailia has a lot going for it: killer jellyfish, 60-foot worms, etc. I can't understand why they would let lack of waffles stand between them and greatness.

Rhona Kirsten 4. February 2008, 12:46

Not to mention 'Kevin bloody Wilson' :D

Matthew 4. February 2008, 12:50

Shhhhhhhh! I would never mention Kevin Bloody Wilson! :zip:

Rhona Kirsten 4. February 2008, 12:52

Matthew 4. February 2008, 13:02

Hehehe.

Kevin Bloody Wilson's name is neither Kevin nor Wilson. He claims to be an outback outlaw, but he was born in Sydney. I think he's a wannabe bushranger, and I think he uses *ahem* colorful language to make people think he's not from the suburbs.

But, that's just me.

Rhona Kirsten 5. February 2008, 12:46

No, I think he just does that cause he's a bozo :D

It's a little disconcerting when the MyOpera folks lose our images, isn't it?

Rhona Kirsten 5. February 2008, 13:11

:left: What images, should I be disturbed? :right:

Matthew 5. February 2008, 16:09

Maybe it was just me. I had no images when I was at home. Must have hit a browser setting. I'll have to check.

As for being disturbed, that's sort of a judgment call, isn't it?
