garden, food
The asparagus has bolted, but to my surprise, the blueberries are ripening! Yea for fresh food!
This picture, taken on Monday, shows a couple of ripe berries. Last night, Thursday, I made blueberry smoothies (man, I love eating four or five fruits from one 20 ounce glass!), and we will definately be having blueberry syrup on our waffles tomorrow!

nutrition, food
If you are like me, excercise has fallen down a few notches on your priority list. And if, at the same time, your eating habits haven't changed to coincide with the lower metabolism/calorie loss due to reduced excercise, then you are expanding in places you'd rather stayed the same size.
There is online help for us. Of course, exercise is necessary, but a small first step is becoming more aware of what we're putting into our bodies. Here are some sites that can help:
-
Fitday.com is a free online journal that lets you keep track of daily calorie counts; carbs, fat and protein; weight loss and your goals; nutrition information for many foods, diet analysis and more.
-
Foodsel.com gives you nutritional information categorized by manufacturer, food group or particular nutrient. You can find a lot of nutrition information at Nutritiondata.com, too.
- You can check the calories of thousands of foods at caloriecounter.com. And just in case you don't know what a 300 calorie meal looks like, you can have a look to compare that pile on your plate to an actual 300 calorie meal at DietBlog.com.
I'm off to see what kind of nutrition is in my english muffin with peanut butter...

breakfast, food
I can't help it, I love waffles. They make pancakes seem like a hillbilly cousin (you know - he's amusing, but you wouldn't invite him for breakfast).
I'm going to make them in the morning, and I thought I'd share my basic recipe. I may go with just this, though I often add apple and cinnamon, cinnamon and raisins, or banana. Sometimes I substitute some OJ for milk, and add orange zest and chocolate chips...
- 1 cup Flour
- 1 cup milk
- 1 1/2 tsp. baking powder
- 2 tbs oil
- 1 egg, separated
Mix the flour and baking powder. Add the milk, oil and egg yolk. Mix until a batter forms. Lumps are ok. Whip the egg white to soft peaks and fold into the batter. Spoon into a HOT waffle iron, and cook to the desired color/crustiness. I like them crisp, so I cook them until they are golden brown.
If you intend to add something else - blueberries or something - do it before you fold in the egg white. Beating the white is what makes these waffles light and airy, and it also helps them become crispy. You can add the egg at once without beating if you like a heavier waffle, or if you don't like your waffls crispy.
Top with syrup, fruit and whipped cream, or some other favorite. Just don't tell me if you put peanut butter and syrup on them. I love both, but mising them seems sacrilegious.
If you must have your hillbilly cousin for breakfast, the same batter can be used for pancakes - don't bother beating the egg white, and you may want to add milk to make a thinner batter.
