Stir-fried oysters with ginger and green onion. A little salt, white pepper, sugar, and white wine does the trick. The oysters are a dozen a jar for $5.99 CND (sale price). I used six in this dish, saving the rest for later.

It is very easy to make and is delicious. Starts with putting slices of ginger in cooking oil. The green onion is put in last. Add a little starch to thicken the juice. LOL at the smiley.

Someone is feeling brave and courageous today.
I never had stir-fried oysters in my life. We usually eat them raw here, largely available around the Holiday period.
It does look good though. I wouldn't want to risk my life for the remaining six though, Deb.
And, ****, what a good price!

You should try this sometimes. The ginger and green onion really give it a good flavour.

I'd be afraid I'd stir-fry the oysters too long. How do I know when they are done?

BTW I love ginger.

The price is usually $6.99 or $7.99. With high heat, under eight minutes is fully enough. It doesn't matter if it is cooked too long, only a tiny bit of the oyster which is the bit that links the meat to the shell is affected - that part would be too chewy if cooked too long.

By then they may be overdone.
It goes quickly, I assume, and when in doubt, you can pick one to give it a little but and look at the inside center.

Yes, it's a quick affair. But it doesn't matter if it's overdone, because the oysters taste the same. The only major difference is that the oysters will shrink a little if cooked too long.

My wife and I went out to a nice dinner Tuesday night before a concert we attended (Leonard Cohen). She had oysters broiled on the half shell with wilted fresh spinach and a delightful cheese stuffing rolled in the spinach leaves and tucked under the oysters in their shells. It was perfectly seasoned and broiled and I had trouble avoiding eating her appetizer instead of my own. I opted for a fresh green salad with fruit and nuts in a wonderful vinaigrette that featured walnut oil.
