Historically called Higo province before the Meiji restoration.

Geographically, it is located to the west of the Ariake inland sea and the Amakusa archipelago.

Local cuisine includes Karashirenkon, lotus root with mustard stuffed into the holes, covered with soybean and white flour then fried. Basashi is another popular Kumamoto food, which is raw horse meat eaten with ginger and soy sauce. Also boiled pork rib, Tonkotsu in ramen noodles.. Amakusa boasts many types of seafood.

A famous sweet is the Ikinaridango (sometimes called Ikinarimanjuu), made of sweet potato and anko which are covered in dough and wheat flour.
