Rosa damascena

Damask rose, the national flower of Iran, is native to the Middle East. It has a long history; commercial distilleries existed in 1612 in Shiraz, Fars. It is one of the most popular plants in Iran. This plant grows both naturally and in cultivation in many parts of Iran as it is very resistant to drought conditions. The major production areas in Iran are Kashan, Fars, and Azerbaijan.

The major products of damask rose in Iran are Rose water, rose oil and rose bud. Harvesting is done mostly by hand in May-June. The yield range is 2-7 tons/ha. Distillation and production of rose water is mostly traditional but there are also some industrial distilleries. Rose water is used mostly in religious ceremonies and the food industry, although it is also used in traditional Iranian medicine along with rose hip which is rich in vitamin C. Rose oil is exported for use in the perfume industry. This paper discusses aspects of research, and topics related to cultivation and products of Damask rose in Iran.

wink what an informative post, you know ...

In Western Europe, rose water (as well as orange flower water) is sometimes used to flavour marzipan ... Although it is believed to have originated in Persia (present-day Iran) and to have been introduced to Europe through the Turks, there is some dispute between Hungary and Italy over its origin. Marzipan became a specialty of the Baltic Sea region of Germany. In particular, the city of Lübeck has a proud tradition of marzipan manufacture (Lübecker Marzipan ). The city's manufacturers like Niederegger still guarantee their marzipan to contain two thirds almonds by weight, which results in a juicy, bright yellow product of highest quality. ...

... I was born in Lübeck ... and so I knew already of rosewater but not in detail smile
thank you for posting this up and for the stunning pictures, really a nice way to start the day wink

Ruže iz Damaska smile

First time I`ve ever heard of rose water is when I ate lokums (ratluk in Serbian, there is a name Turkish Delight in use in Great Britain) with rose taste. At first I thought the taste was a product of some chemistry then someone explained me about rose water bigsmile

Nice post, thank you smile

Beautiful pictures and informative post. Roses do well here in Arizona and I have two small rose trees. I love the smell of them. I used to use rose water in my bath.
