Fun-Size Chocolate Muffin

- 16 Table spoons flour
- 5 eggs
- 8 table spoons butter at room-temperature
- 8 table spoons white (granulated)sugar
- 1 package baking powder (12g)
- 1 table spoon unsweetened cocoa powder
- 1 lemon, finely zested
- Colored candy or chocolate to decorate
1/ Preheat oven at 350 degree F. Combine sugar + egg in a large bowl and beat with electric mixer at high speed until fully combined and look foamy
2/ Combine Flour + baking powder + cocoa powder in another bowl with spoon
3/ Pour the egg + sugar into the flour and beat with electric mixer at low speed at first and gradually increase the speed. Add butter little by little. Then, add the lemon juice. Beat unitl smooth and fully combined.
4/ Spoon batter into a mini muffin baking pan. Bake for 12 to 15 minutes or until insert toothpick comes out clean. Don't over bake!
5/ Take out, let cool on rack. Decorate them in any way you like
