Peach and Mango Dome Cake for my Hubby's Birthday

Yesterday (May 22nd) was my husband's official Birthday. I cooked him "Bún Bò Huế" (his all-time favorite) and also made him this cute Yellowish Peach and Mango Mousse Cake in a Dome shape. I don't know why but I'm just so obsessed to Dome Cake lately We celebrate his birthday together at bro. Binh's house. It was just a cozy atmosphere where we enjoy Bun Bo and sang "Happy Birthday to you" song, then cut the cake and enjoyed it together like a whole family. My hubby and I did have a very good time yesterday, on his birthday
Recipe for the Mousse:
113 gram Peach Yogurt (I recomment Activa Brand)
2 medium ripe Mangoes, 1 can of sliced Peaches (15 oz./can)
75 gr. sugar
2 tablespoons lemon juice
3 1 / 2 teaspoons gelatin
450 ml. heavy cream.
1/ Puree the peach yogurt, sugar, mango flesh and canned peach slices together in a blender. Strain to remove fiber from mango.
2/ Sprinkle the gelatin powder over the lemon juice. Let the gelatin soften.
3/ Then, warm up the gelatin mixture in microwave for less than 30 seconds, take it out and stirring until dissolves. Allow it to cool a little bit.
4/ While cooling, whip the cream. Stir in the fruit puree into the whipped cream, and then stir in the melted gelatin mixture. Fold to totally combine. Chill in the fridge for mousse to set up a little bit before spreading on cake
For the Cake base, I just use my Chiffon recipe again. I used 1/3 of this recipe here:
I also insert a Peach and Blueberry Panna Cotta in the center of this mousse cake. I will show you the picture of the interior tomorrow
You may see more clearly in this photo that there is actually another cake sitting under the dome cake. It's also a Peach and Mango mousse cake, wrapped in a pretty chocolate ring My husband really love this combination. I was so inspired by the chocolate sculptures that were displayed at school and then I came up with this design...kind of a 2-tier cake but there is more connection going on in there

...And here is a super-ugly photo of the cake interior I forgot to bring my phone to take pictures, so I asked bro. Binh to take the picture of the interior of the cake for me. This is the picture that he took when he was eating his piece of cake and turn out to be the only one that he had in his camera The light even made it more terrible.... But at least, it shows the heavy whipped cream layer that I coated last, right after the mousse....
