Potato Donuts with Strawberry - Coconut - Chocolate Glaze

Coco-Berry Donut, made from coconut glaze and strawberry jam

Ingredients: (for about 10 small Donuts)
A: 1/2 cup of milk
1 package of instant dry yeast (10gr)
Pinch of sugar
B: 1 cups of bread flour (which I prefer, otherwise, you can use all-purpose flour)
1/4 cup of warm mashed potatoes or sweet potatoes
1/4 teaspoon of salt
1/4 cup of sugar
A: Microwave 1/2 cup of milk (for about 30 second) to make it warm (not too hot), add yeast and a pinch of sugar and stir. Let stand for about 5 minutes
B: In a bowl, combine all the B ingredients
Then add the A mixture (from above) and 1 Tablespoons of olive or canola oil to B mixture
Mix the dough well by a spoon for 3 minutes.
Prepare your kneading surface by spreading a few tablespoons of flour on a smooth surface.
Transfer the dough to the middle of the flour and sprinkle a little flour on top and on your hands and on the dough. Knead the dough a few times. If dough still sticky, add more oil (don't add to much flour!)
Once the dough has been kneaded and not sticky anymore, spread it out to be a half inch thick with your hands.
Use a Glass (the one you use to drink water) or anything that is round and about 2/3 the size of a normal donut (since Donut will rise when you deep fry it). Then use another small cup (can use water-bottle lift) to make a hole at the center of the donut dough.
Pour about a half inch of oil (vegetable oil) into a cast iron pan.The oil needs to be heated at Medium to Medium High. Wait for about 5 minutes till the oil is hot enough and you can see small bubble at the bottom of the pan. If the oil starts to smoke it is way too hot! When the oil is ready, reduce the heat to Low (very important) and fry the donuts on low heat until golden on each side.
Allow the donuts to cool on some paper so that the oil soaks off.
Mix: 2 table spoon of strawberry sugar icing + 1 table spoon of fresh lemon juice + 1 Tea spoon of strawberry syrup (to produce better color) + 1 Tea Spoon all purpose flour in a small pot. Stir to dissolve the flour first, then heat and continue to stir well on low heat until smooth and lightly thicken (not too thick). Set aside
Microwave 1 cup of dark chocolate chip for 1 minute or 1'30". Stir well every 30" (important) and check if chocolate chips are all melted
