For myself, I work in two steps: The first with the bigest 360° panorama in one image, but I try to not touch the bottom and the top.
Then (second step) I cut this image in six part for each cube face (thanks to a special software), and I work to make a good bottom and top. Finaly I build the 360° virtual visit. But I understand you, because the first time I tried to build a 360° panorama image, it was hard to imagine how to proceed
Also you can completely change a 360° photo to something else. I remember that Corel PhotoPaint allow to paint directely a 360° project without any real photo. But I haven't tested it yet.
Vue d'Esprit, a 3D programm also allow to build your own 3D landscape in 360°...
